Ingredients

  • 1 cauliflower, washed, dried, trimmed, and cut into florets
  • 200 g brown lentils, rinsed and drained
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 15 g fresh gingers, grated
  • 15 g fresh cilantros, chopped
  • 10 g fresh mint, chopped
  • 80 g soft dates, pitted and finely chopped
  • 2 tbsp tamarind concentrate
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp ground cinnamon
  • 0.25 tsp cayenne pepper
  • 1 tsp fine sea salt
  • 2 tbsp olive oils
  • 1 tbsp lemon juice, freshly squeezed
  • 750 ml waters
  • 0.5 tsp fine sea salt
  • 60 ml hot water

  1. 01

    Prepare the ingredients and equipment

    Set a rack in the center of the oven and preheat it to 220°C / 425°F. Line a large rimmed baking sheet with parchment. Rinse 1 large cauliflower under cool water, drain well, and pat completely dry; trim away the leaves and tough stem, then cut the head into 4 cm florets. Rinse 200 g brown lentils in a fine-mesh sieve until the water runs mostly clear. Finely chop 1 small yellow onion, mince 3 garlic cloves, grate 15 g fresh ginger, chop 15 g fresh cilantro, and chop 10 g fresh mint. Pit and finely chop 80 g soft dates. Measure 2 tbsp tamarind concentrate, 1 tsp ground cumin, 1 tsp ground coriander, 0.5 tsp ground cinnamon, 0.25 tsp cayenne pepper, 1 tsp fine sea salt, 2 tbsp olive oil, and 1 tbsp lemon juice. Keep raw produce and the finished lentils on separate clean surfaces. | Why: Dry cauliflower browns instead of steaming, while measuring everything first keeps the high-heat cooking orderly.

    Cook the lentils

    Place the rinsed 200 g brown lentils in a medium saucepan with 750 ml water. Bring to a boil over high heat, then reduce to a steady simmer and cook uncovered for 20–25 minutes, stirring once or twice, until tender but still holding their shape. Drain thoroughly and return them to the warm saucepan. Stir in the chopped 1 small yellow onion, minced 3 garlic cloves, grated 15 g fresh ginger, chopped 15 g fresh cilantro, chopped 10 g fresh mint, and 0.5 tsp fine sea salt. Cover and keep warm off the heat. | Why: Gentle simmering preserves the lentils’ texture, and the residual heat softens the aromatics without dulling the herbs.

    Roast the cauliflower

    While the lentils cook, place the florets on the lined baking sheet. Drizzle with 2 tbsp olive oil and toss until evenly coated. Spread them in one layer with cut sides against the pan where possible. Roast at 220°C / 425°F for 20 minutes, then turn the pieces and roast for 8–10 minutes more, until browned at the edges and easily pierced with a knife. | Why: A hot, uncrowded tray drives off moisture quickly and creates the roasted flavor that anchors the dish.

    Make and apply the date-tamarind glaze

    In a small bowl, whisk 2 tbsp tamarind concentrate, chopped 80 g soft dates, 1 tsp ground cumin, 1 tsp ground coriander, 0.5 tsp ground cinnamon, 0.25 tsp cayenne pepper, 0.5 tsp fine sea salt, and 1 tbsp lemon juice with 60 ml hot water until the dates are mostly broken down and the mixture is thick but pourable. Remove the baking sheet briefly. Spoon the glaze over the roasted pieces and toss carefully with a spatula. Return the sheet to the oven for 5–7 minutes, until the glaze is glossy and lightly caramelized; do not let it blacken. | Why: Adding the sweet-tart glaze near the end protects it from burning while giving it enough heat to cling and caramelize.

    Rest, finish, and serve

    Remove the tray and saucepan from the heat. Let the cauliflower rest for 3 minutes so the glaze sets and the lentils cool slightly. Taste the lentils and adjust only if needed with a small pinch of the remaining seasoning. Spoon the warm lentils onto four plates, top with the glazed cauliflower, and serve immediately with any pan juices drizzled over the top. The cauliflower should be tender inside, charred in spots, and sticky rather than wet. | Why: A brief rest firms the glaze, settles the heat, and keeps the lentils creamy instead of watery at serving.
