  • 240 g fine yellow cornmeal

  • 2 tsp sweet paprika
  • 1 tsp smoked paprika
  • 2 tbsp tomato paste
  • 400 ml low-sodium vegetable stock
  • 1 tbsp olive oil
  • 2 tbsp lemon juices, freshly squeezed

  1. 01

    Prepare the produce, herbs, and equipment

    Set a large saucepan, a 23-by-33-cm rimmed baking dish, a large skillet, a cutting board, a chef’s knife, a fine grater, measuring spoons, and a spatula on the counter. Line the baking dish with parchment. Rinse 400 g cremini mushrooms, 150 g yellow onion, 3 each garlic cloves, 15 g fresh dill, 15 g fresh parsley, and 1 each lemon under cool running water; dry everything thoroughly. Slice the mushrooms, finely dice the onion, mince the garlic, chop the herbs, and finely grate the lemon zest before cutting the lemon to squeeze later. Keep the prepared items separate. Pour in 400 ml low-sodium vegetable stock, scrape up any browned bits, and simmer uncovered for 8–10 minutes until the sauce coats a spoon.
