Iraqi-Inspired Tamarind-Date Chicken with Golden Rice

- 150 g yellow onions, peeled and finely chopped
- 3 garlic cloves, peeled and finely chopped
- 120 g soft dates, pitted and halved
- 300 g basmati rice, rinsed and drained
- 2 tbsp olive oils
- 2 tbsp tamarind concentrate
- 2 tbsp lemon juices, freshly squeezed
- 1 tsp ground cumin
- 1 tsp ground coriander

Prepare the ingredients and equipment
Position an oven rack in the center and preheat the oven to 190°C / 375°F. Set out a large oven-safe skillet or Dutch oven with a lid, a medium saucepan with a lid, a cutting board, a chef’s knife, a fine-mesh sieve, and measuring spoons. Wash the lemon, cilantro, and onion under cool running water; dry the herbs and produce thoroughly. Trim excess fat from 680 g boneless, skinless chicken thighs, then pat the pieces very dry. Peel and finely chop 150 g yellow onion and 3 garlic cloves. Pit and halve 120 g soft dates. Rinse 300 g basmati rice in the sieve under cool water until the runoff is nearly clear, then drain well. Measure 2 tbsp olive oil, 2 tbsp tamarind concentrate, 2 tbsp lemon juice, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp ground turmeric, 1 tsp sweet paprika, 0.75 tsp fine salt, 0.25 tsp black pepper, 600 ml gluten-free chicken stock, and 15 g fresh cilantro; finely chop the cilantro and reserve it for serving. Keep the chicken refrigerated until the pan is ready, and wash your hands and the cutting board after handling it. | Why: Thorough drying improves browning, while rinsing the rice removes excess surface starch for distinct grains.

Brown the chicken
Place the skillet over medium-high heat for 2 minutes. Add 1 tbsp olive oil and swirl to coat. Arrange the chicken in a single layer without crowding; work in two batches if needed. Cook for 3–4 minutes on the first side and 2–3 minutes on the second, turning when the surface is deeply golden and the pieces release easily. Transfer the browned chicken to a clean plate; it will not yet be cooked through. Reduce the heat to medium. | Why: Browning creates savory roasted notes that enrich the eventual braising sauce.

Build the date-tamarind braise
Add 1 tbsp olive oil to the skillet, followed by the prepared onion. Cook for 5 minutes, stirring and scraping up browned bits, until softened and lightly golden. Stir in the prepared garlic and cook for 30 seconds, until fragrant. Add the prepared cumin, coriander, turmeric, paprika, salt, and pepper, and stir for 30 seconds to toast the spices. Pour in the prepared tamarind concentrate, lemon juice, and stock, then add the prepared dates. Bring the liquid to a gentle simmer, return the chicken and any plate juices to the skillet, and spoon sauce over the pieces. Braise and cook the rice
Transfer the covered skillet to the preheated oven and braise for 25 minutes, until the chicken is tender and reaches 74°C / 165°F at the thickest point. While it braises, put the drained rice and prepared stock into the saucepan and bring to a boil over high heat. Stir once, cover, reduce the heat to the lowest setting, and cook for 15 minutes. Turn off the heat and let the covered rice stand for 10 minutes; do not lift the lid during this rest. Fluff gently with a fork. If the sauce is thinner than cream, uncover the skillet and simmer it on the stovetop over medium heat for 2–4 minutes until glossy. | Why: Covered cooking protects the rice and chicken from drying, while the final uncovered reduction concentrates the tangy sauce.

Rest, garnish, and serve
Remove the skillet from the oven and let the chicken rest, covered, for 5 minutes. Taste the sauce and adjust only if needed with a small pinch of the prepared salt or a few drops of the prepared lemon juice. Spoon the fluffy rice onto four warm plates, place the chicken on top, and ladle over the date-tamarind sauce.
