Beninese-Inspired Smoky Pumpkin and Black-Eyed Pea Stew with Millet
A hearty West African-inspired bowl built around creamy pumpkin, tender black-eyed peas, tomato, ginger, and warm smoked spices, served over fluffy millet with lime and cilantro. The stew is naturally vegan and gluten-free, and a short oven-roasting step deepens the pumpkin’s sweetness before it meets the aromatic tomato base.

- 180 g millets, rinsed and drained
- 480 g canned black-eyed peas, drained and rinsed
- 1 yellow onion, peeled and finely chopped
- 3 garlic cloves, peeled and minced
- 20 g fresh gingers, peeled and finely grated
- 600 g pumpkin, peeled and cut into 2 cm cubes

Rinse, drain, and organize
Set a cutting board, chef’s knife, colander, 3-quart Dutch oven, medium saucepan with lid, baking sheet, parchment, measuring spoons, and a heatproof spatula on the counter. Heat the oven to 220°C / 425°F and line the baking sheet with parchment. Rinse 180 g millet under cool running water until the water runs mostly clear, then drain well. Drain and rinse 480 g canned black-eyed peas in the colander. Peel and finely chop 1 medium yellow onion, peel and mince 3 garlic cloves, and peel and finely grate 20 g fresh ginger. Cut 600 g peeled pumpkin into 2 cm cubes, keeping the pieces close in size. Measure the remaining seasonings before cooking so the aromatic base will not scorch while you search for them. | Why: Even pieces cook evenly, while rinsing removes surface starch from the grain and excess liquid from the legumes.

Roast the pumpkin
Toss the cubed pumpkin on the lined baking sheet with 1 tbsp neutral oil, 1/2 tsp fine salt, and 1/4 tsp cayenne pepper until every piece is lightly coated. Spread it in one layer with space between the cubes. Roast at 220°C / 425°F for 20 minutes, turning once after 12 minutes, until the edges are browned and a fork enters the centers with slight resistance. Remove the sheet and leave it nearby; keep the oven on only if you want to warm serving bowls, otherwise switch it off. | Why: High heat concentrates the pumpkin’s sweetness and adds smoky browned edges that balance the soft stew.

Cook the millet
Put the rinsed grain into the saucepan with 360 ml water and 1/4 tsp fine salt. Bring it to a boil over medium-high heat, then immediately cover, reduce to low, and simmer for 18 minutes. Do not lift the lid during cooking. Turn off the heat and let it stand covered for 10 minutes; then fluff gently with a fork and keep covered until serving. The grains should be tender and separate, with no liquid remaining. | Why: A covered rest lets the grain finish steaming without becoming wet or sticky.

Build the aromatic tomato base
Warm the Dutch oven over medium heat for 1 minute. Add 1 tbsp neutral oil, then add the chopped onion with 1/4 tsp fine salt. Cook for 6 minutes, stirring every minute, until translucent and lightly golden. Add the garlic and ginger and cook for 1 minute, stirring constantly, until fragrant but not browned. Stir in 2 tsp smoked paprika, 1 tsp ground coriander, and 1/2 tsp ground cumin for 30 seconds. Add 400 g canned crushed tomatoes and 120 ml vegetable stock, scraping the bottom with the spatula. Simmer the peas and finish the stew
Stir the drained peas into the simmering tomato base. Fold in the roasted pumpkin carefully so most cubes remain intact, then simmer uncovered for 3 minutes. Taste and adjust with 1/4 tsp fine salt if needed.
