Eritrean-Inspired Berbere Lentil-Stuffed Sweet Potatoes

Wash, dry, and prepare the ingredients
Set a rack in the center of the oven and line a rimmed baking sheet with parchment. Scrub and dry 4 sweet potatoes; pierce each several times with a fork. Rinse 180 g brown lentils under cool water and drain well. Peel and finely chop 1 red onion, mince 3 garlic cloves, and finely chop 1 small carrot. Rinse and finely chop 15 g fresh cilantro; keep the leaves and tender stems together. Measure 2 tsp berbere spice, 1 tsp ground cumin, and 0.5 tsp fine salt. Cut 1 lemon in half; reserve one half for juice and slice the other half into wedges. Measure 30 ml olive oil, 600 ml vegetable stock, and 120 g plain unsweetened soy yogurt. Wash and finely shred 120 g green cabbage. Bake the sweet potatoes
Heat the prepared oven to 220°C. Build the berbere lentil filling
While the sweet potatoes bake, warm a wide lidded saucepan over medium heat for 1 minute. Add the measured olive oil, then cook the chopped onion and carrot for 6 minutes, stirring every minute, until softened and lightly golden. Stir in the minced garlic, berbere spice, cumin, and salt for 30 seconds, just until fragrant and brick-red. Add the rinsed lentils and vegetable stock, bring to a boil, then reduce to low. Cover and simmer for 20–25 minutes, stirring once halfway, until the lentils are tender but still hold their shape and only a little liquid remains. If the pan is dry before tenderness, add 30 ml water; if liquid remains at the end, uncover and simmer for 2–3 minutes. Make the cool cabbage topping
