Ingredients

  • 200 g whole-grain sorghum, rinsed and drained
  • 700 ml waters
  • 1 tsp fine salt
  • 500 g pumpkin, peeled, seeded, and cut into 2-cm cubes
  • 150 g yellow onions, peeled and finely diced
  • 2 garlics, peeled and minced
  • 2 tbsp sunflower oil
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 0.5 tsp black pepper
  • 80 g dried apricots, finely chopped
  • 300 g crushed tomatos
  • 120 ml waters
  • 1 tbsp apple-cider vinegar
  • 1 large egg, beaten
  • 1 tbsp sunflower oil
  • 200 g collard greens, stems removed and sliced into 2-cm ribbons
  • 60 ml waters
  • 1 lemon, cut into wedges

    Rinse and cook the sorghum

    Set a medium saucepan, a fine-mesh strainer, a large bowl, a baking sheet, a 25-cm nonstick skillet, a small saucepan, a cutting board, and a chef’s knife on the work surface. Rinse 200 g whole-grain sorghum under cold running water until the water is nearly clear, then drain well. Put it in the saucepan with 700 ml water and 1 tsp fine salt. Bring to a boil over high heat, reduce to low, cover, and simmer for 35 minutes, or until the grains are tender but still pleasantly chewy. Turn off the heat and leave covered for 5 minutes, then spread the cooked grain on the baking sheet in a thin layer to cool for 10 minutes. | Why: Rinsing removes surface dust, while cooling the cooked grain makes firmer cakes that hold together.

    Roast the pumpkin and aromatics

    Heat the oven to 220°C. Line the baking sheet with parchment. Peel and seed 500 g pumpkin, then cut it into 2-cm cubes. Peel and finely dice 150 g yellow onion. Peel and mince 2 cloves garlic. Toss the pumpkin, onion, and garlic with 2 tbsp sunflower oil, 1 tsp smoked paprika, 1 tsp ground coriander, and ½ tsp black pepper; spread everything in one layer on the lined sheet. Roast for 25 minutes, turning once at the halfway point, until the pumpkin is fork-tender and browned at the edges and the onion is soft.     Make the apricot tomato relish

    While the pumpkin roasts, place 80 g dried apricots in the small saucepan with 300 g crushed tomatoes and 120 ml water. Stir in 1 tbsp apple-cider vinegar and taste; add a small pinch more salt only if needed. Remove from the heat and cover. | Why: Simmering softens the fruit and melds its sweetness with the tomato before the vinegar adds lift.

    Form and griddle the sorghum cakes

    Transfer the cooled grain to a bowl. Beat 1 large egg in a cup, pour it over the grain, and mix until evenly coated. Divide the mixture into 8 portions and press each into a 1.5-cm-thick round with damp hands. Heat the skillet over medium heat for 2 minutes, add 1 tbsp sunflower oil, and arrange the cakes without crowding. Cook for 4 minutes per side, turning once with a wide spatula, until both sides are deep golden and the centers feel firm rather than squishy. Work in two batches if necessary, adding a few drops of the reserved oil only if the skillet looks dry. Transfer the cakes to a plate and loosely cover. | Why: The egg binds the grains, while moderate heat creates a crisp crust before the centers dry out.

    Wilt the greens and finish the plate

    Wash 200 g collard greens, shake them dry, strip away the tough stems, and slice the leaves into 2-cm ribbons. Put the greens in the still-warm skillet with 60 ml water, cover, and cook over medium heat for 4 minutes, stirring once, until bright green and tender with a little bite. Uncover and cook for 1 minute more so excess water evaporates. Cut 1 lemon into wedges. Spoon the warm relish onto four plates, add two sorghum cakes per plate, and divide the roasted pumpkin and greens alongside. Finish with lemon wedges for squeezing and serve immediately. | Why: Brief covered steaming tenderizes the greens efficiently, and fresh citrus balances the dish’s roasted and fruity flavors.
