  • 15 g fresh gingers, peeled and minced
  • 3 garlic cloves, minced
  • 1 yellow onion, diced
  • 2 tomatoes, diced
  • 120 g baby spinaches, rinsed and dried
  • 450 g raw peeled shrimp, patted dry
  • 1 tsp fine salt
  • 0.5 tsp ground black pepper
  • 450 ml waters
  • 3 tbsp red palm oil
  • 240 ml low-sodium vegetable broth

    Rinse, measure, and prepare

    Place a fine-mesh strainer in the sink. Rinse 300 g long-grain white rice under cool running water, rubbing the grains lightly, until the water is nearly clear; drain well. Peel and mince 15 g fresh ginger and 3 garlic cloves. Dice 1 medium yellow onion and 2 medium tomatoes. Rinse 120 g baby spinach, shake it dry, and set it aside. Pat 450 g raw peeled shrimp dry with paper towels; discard any shells or dark veins. Measure 1 tsp fine salt and 0.5 tsp ground black pepper into a small bowl. Keep the seafood refrigerated until the sauce is ready. | Why: Thoroughly rinsed rice cooks more distinctly, while drying the shrimp prevents a watery sauce and improves seasoning adhesion.

Reduce the heat to medium-low and simmer uncovered for 5 minutes; the sauce should coat a spoon and show small steady bubbles.
