Instructions
- 01
Prepare the mushrooms and frying setup
Set a wire rack over a rimmed baking sheet. Fill a wide bowl with cool water, quickly rinse 600 g oyster mushrooms, and separate any large clusters into smaller pieces without tearing them excessively. Pat them very dry with clean towels; excess moisture prevents crisping. Keep the dried mushrooms on a plate while you prepare the batter. | Why: A rack keeps the fried coating crisp, while thorough drying helps it adhere and brown instead of steaming.
- 02
Make the sorghum batter
In a medium bowl, whisk 120 g sorghum flour, 180 ml water, 1 tsp smoked paprika, 1 tsp ground coriander, 1 tsp fine salt, and 0.5 tsp black pepper until smooth. The batter should flow slowly from the whisk, like light pancake batter; if it seems unusually thick, let it stand for 2 minutes rather than adding extra liquid. Set it beside the dried mushrooms. | Why: Resting briefly hydrates the sorghum flour and gives the spices time to distribute evenly through the coating.
- 03
Prepare the warm relish
Finely chop 300 g tomatoes and 100 g red onion, then combine them in a small saucepan with 60 g smooth peanut butter, 30 ml lime juice, and 15 g fresh cilantro. Place the pan over low heat and stir for 4 minutes, just until the tomato releases juice, the peanut butter loosens, and the mixture is warm but not bubbling hard. Remove it from the heat, taste, and reserve covered while you fry. | Why: Gentle warming softens the onion and melds the nutty, acidic, and fresh flavors without dulling the relish.
- 04
Heat the pan and coat the mushrooms
Pour 3 tbsp neutral frying oil into a heavy 28 cm skillet and heat over medium-high heat to about 175°C; a small drop of batter should sizzle immediately and rise without smoking. Working in small batches, turn the dried mushroom clusters through the rested batter until evenly coated, allowing excess batter to drip back into the bowl. Do not coat more pieces than can fit in the pan without touching. | Why: Correct oil temperature sets the sorghum crust quickly and prevents the mushrooms from absorbing excess oil.
- 05
Shallow-fry, drain, and serve
Carefully lower the coated clusters into the hot oil and fry for 3 minutes on the first side and 2 to 3 minutes on the second, turning once with tongs. Cook in batches, returning the oil to 175°C between batches; the finished coating should be deep golden, crisp, and firm, while the centers feel tender when pressed. Transfer each batch to the prepared rack and let it drain for 5 minutes. Stir the warm relish, divide the crisp clusters among four plates, spoon the relish alongside, and serve immediately. | Why: Turning only once limits coating loss, and brief rack-draining preserves the contrast between the crisp crust and juicy center.
