Core and thinly slice the fruit, shred the vegetable, peel and mince the allium, and chop the herb. Pat the poultry very dry; if the pieces are thick, place them between sheets of parchment and gently pound them to an even 1/2-inch thickness. Measure everything before breading. 3 tbsp olive oil, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper will season the crust, slaw, and dressing.
