  • 180 g dry couscous
  • 350 ml chicken broths
  • 500 g ground turkeies
  • 40 g panko breadcrumbs
  • 1 large egg
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 1 tbsp lemon juice
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

    Prepare the equipment and ingredients

    Set a large nonstick skillet, a medium saucepan with a lid, a large mixing bowl, a small bowl, a baking sheet, a chef’s knife, and a cutting board on your work surface. Line the baking sheet with parchment. Wash and dry 1 cucumber, 1 lemon, and 20 g fresh parsley. Finely grate the zest from half the lemon, then cut the lemon into wedges; finely chop the parsley, keeping 1 tablespoon aside for finishing. Finely chop 60 g red onion and mince 2 garlic cloves. Measure 120 g plain Greek yogurt, 180 g dry couscous, and 350 ml chicken broth.     Make the cucumber yogurt salad
