Smoky Sweet Potato and Chickpea Quinoa Bowls with Lemon Feta Kale
A hearty vegetarian grain bowl with caramelized sweet potatoes, crisp-edged smoky chickpeas, lemony kale, and a bright feta finish. Roasting everything on one pan keeps the hands-on work easy while the quinoa cooks.

Ingredients
- 700 g sweet potatos, scrubbed, dried, and cut into 2 cm cubes
- 425 g chickpeas, rinsed, drained, and dried
- 170 g quinoas, rinsed
- 150 g kales, stemmed, washed, dried, and thinly sliced
- 15 g fresh parsleies, washed, dried, and finely chopped
- 1 lemon, zested and halved
- 30 g feta cheeses, crumbled
- 480 ml waters
- 3 tbsp olive oils
- 1 tsp kosher salt
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 0.5 tsp black pepper, freshly ground if possible

Prepare the ingredients and cookware
Position one oven rack in the upper-middle position and set a rimmed baking sheet, a medium saucepan with a lid, a large skillet, a fine-mesh strainer, a cutting board, and a chef’s knife within reach. Heat the oven to 220°C / 425°F. Scrub, rinse, and thoroughly dry 700 g sweet potatoes; peel if their skins are tough, then cut them into 2 cm / ¾-inch cubes. Rinse and drain 425 g chickpeas, then pat them very dry with a clean kitchen towel. Rinse 170 g quinoa in the fine-mesh strainer until the water runs mostly clear. Strip the stems from 150 g kale, rinse and dry the leaves, then thinly slice them. Rinse, dry, and finely chop 15 g fresh parsley. Rinse and dry 1 lemon, then finely grate its zest and halve it. Crumble 30 g feta cheese and keep it chilled. Measure 480 ml water, 3 tbsp olive oil, 1 tsp kosher salt, 1 tsp smoked paprika, 1 tsp ground cumin, and 1/2 tsp black pepper. Line the baking sheet with parchment paper if desired. | Why: Dry chickpeas roast crisp rather than steam, while evenly cut sweet potatoes cook at the same rate.

Roast the sweet potatoes and chickpeas
On the prepared baking sheet, toss the sweet potatoes and chickpeas with 2 tbsp of the olive oil, the smoked paprika, ground cumin, black pepper, and 1/2 tsp of the kosher salt. Spread them into one uncrowded layer, keeping the chickpeas mostly around the edges. Roast for 25 minutes, stir well, and roast for 8 to 10 minutes more, until the sweet potatoes are browned and tender when pierced and the chickpeas have crisp, split skins. | Why: A hot, uncrowded pan develops deep browning and keeps the chickpeas pleasantly crisp.

Cook and rest the quinoa
While the vegetables roast, combine the rinsed quinoa, water, and remaining 1/2 tsp kosher salt in the medium saucepan. Bring to a full boil over high heat, then cover, reduce to low, and simmer for 15 minutes. Remove the pan from the heat and leave it covered for 5 minutes. Fluff gently with a fork; the grains should be tender, with their small white germ rings visible. | Why: The covered rest lets the quinoa finish steaming so it stays fluffy instead of wet.

Wilt the lemony kale
When the roasting timer has about 8 minutes remaining, warm the remaining 1 tbsp olive oil in the large skillet over medium heat. Add the sliced kale, 2 tbsp water from the measured water if any remains in the saucepan, and a small pinch of the cooked quinoa’s seasoning. Cook for 3 to 4 minutes, tossing often, until the kale is glossy, tender, and still vibrant green. Turn off the heat and squeeze in juice from one lemon half; reserve the other half for serving. | Why: Brief wilting softens kale’s chew while the lemon keeps its flavor fresh and lively.

Assemble and serve the bowls
Divide the fluffed quinoa among 4 shallow bowls. Top with the lemony kale, roasted sweet potatoes, and chickpeas. Sprinkle with the lemon zest, chopped parsley, and crumbled feta cheese. Taste a bowl and add a small pinch of kosher salt or black pepper only if needed, then serve immediately with the reserved lemon half cut into wedges.
