  • 1 lime, zested and cut into wedges
  • 3 scallions, thinly sliced
  • 720 ml chicken broths
  • 160 g fine yellow cornmeal
  • 30 g unsalted butters
  • 60 g parmesan cheeses, finely grated
  • 0.5 tsp fine sea salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oils
  • 0.25 tsp fine sea salt
  • 0.25 tsp black pepper
  • 450 g lean ground turkeys
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.25 tsp red pepper flake
  • 0.25 tsp fine sea salt
  • 60 ml fresh lime juice, from the prepared lime
  • 2 tbsp honeies
  • 1 tbsp water
  • 0.25 tsp fine sea salt (optional)
  • 60 ml hot water (optional)
  • 3 scallions, sliced, from the prepared scallions

Instructions

  1. 01

Set up the kitchen and prep the produce

Position one large nonstick skillet, one medium saucepan, a chef’s knife, a cutting board, a whisk, a wooden spoon, and four shallow serving bowls. Fill a clean sink or large bowl with cool water, rinse 1 small green cabbage, 1 lime, and 3 scallions, then dry them thoroughly. Remove the cabbage’s damaged outer leaves and core, cut it into 8 wedges, and thinly slice the scallions. Zest the lime, then cut it into wedges. Measure the remaining ingredients so cooking can proceed without interruption. | Why: Dry produce browns instead of steaming, and advance measuring keeps the short cooking sequence controlled.

  2. 02

    Cook the creamy corn polenta

Pour 720 ml chicken broth into the medium saucepan and bring it to a lively simmer over medium-high heat, about 5 minutes. While whisking constantly, slowly rain in 160 g fine yellow cornmeal to prevent lumps. Reduce the heat to low and cook for 18–20 minutes, whisking every 3–4 minutes, until the mixture is thick, smooth, and softly spoonable. Stir in 30 g unsalted butter and 60 g grated Parmesan cheese, then season with 1/2 tsp fine sea salt and 1/4 tsp black pepper. Cover, remove from the heat, and keep warm. | Why: Gradual whisking creates a lump-free base, while the final enrichment makes the polenta creamy and savory.

  3. 03

    Char the cabbage

Heat the large skillet over medium-high heat for 2 minutes. Add 2 tbsp olive oil, swirl to coat, and arrange the cabbage wedges in a single layer. Sprinkle with 1/4 tsp fine sea salt and 1/4 tsp black pepper. Cook undisturbed for 4 minutes, then turn the wedges and cook 3–4 minutes more, until the cut faces are deeply browned and the thick centers are just tender when pierced. Transfer the wedges to a plate and loosely cover them with foil. | Why: High heat develops caramelized edges while leaving enough structure for the cabbage to stay pleasantly juicy.

  4. 04

    Brown and season the turkey

Return the skillet to medium-high heat. Add 450 g lean ground turkey and break it into small crumbles with the wooden spoon. Cook for 5–7 minutes, stirring occasionally, until no pink remains and the turkey reaches 74°C in the thickest pieces. Stir in 2 minced garlic cloves, 1 tsp smoked paprika, 1/2 tsp ground cumin, 1/4 tsp red pepper flakes, and 1/4 tsp fine sea salt. Cook for 60 seconds, until fragrant, then turn the heat to low. | Why: Browning builds savory flavor, and the brief spice bloom releases aroma without scorching the garlic.

  5. 05

    Make the honey-lime glaze

Whisk 60 ml fresh lime juice, 2 tbsp honey, and 1 tbsp water in a small bowl. Pour the glaze into the skillet with the cooked turkey and simmer over low heat for 2 minutes, stirring, until glossy and lightly thickened. Taste and add 1/4 tsp fine sea salt only if the sauce needs more seasoning. Remove the skillet from the heat and let the turkey rest for 3 minutes. | Why: Acid brightens the browned meat, while honey rounds the spice and gives the sauce its clingy finish.

  6. 06

    Plate and serve

Stir the covered polenta until smooth; if it has tightened, loosen it with 60 ml hot water. Divide it among four shallow bowls. Add the charred cabbage wedges and spoon the glazed turkey over and around them. Finish with 3 sliced scallions, the reserved lime zest, and the prepared lime wedges for squeezing. Serve immediately while the base is creamy and the cabbage is warm. | Why: Loosening the polenta restores its silky texture, while fresh alliums and citrus add a crisp, bright finish to the rich plate.
