  • 1 lb carrot, trimmed and halved lengthwise
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.5 cup panko breadcrumb
  • 1 tbsp za’atar
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp olive oil
  • 2 tbsp tahinis
  • 1 tbsp lemon juice, freshly squeezed
  • 2 tbsp waters
  • 0.25 tsp kosher salt
  • 1.25 lb salmon fillets, skin-on or skinless, cut into 4 portions
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 chickpeas, 15-ounce cans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tbsp lemon juice, freshly squeezed
  • 0.25 tsp ground cumin
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsleies, finely chopped
  • 1 tbsp fresh parsley, finely chopped

Instructions

  1. 01

    Heat the oven and prepare the vegetables

    Position one rack in the center of the oven and another in the upper third. Heat the oven to 425°F. Line a large rimmed sheet pan with parchment. Rinse 1 lb carrots under cool water, scrub them well, and dry them; peel only if the skins are rough. Trim and halve them lengthwise, or quarter very thick carrots. Toss them on the lined pan with 1 tbsp olive oil, 1/2 tsp kosher salt, and 1/4 tsp black pepper, spreading them in one layer. Roast on the center rack for 15 minutes, until their edges begin to brown and a knife meets slight resistance. | Why: Starting the carrots first gives them the head start they need to finish tender at the same time as the salmon.

    Make the crisp topping and lemon dressing

    While the carrots roast, place 1/2 cup panko breadcrumbs, 1 tbsp za’atar, 1 tbsp chopped fresh parsley, and 1 tbsp olive oil in a small bowl. Stir until the crumbs are evenly coated. In a second bowl, whisk 2 tbsp tahini, 1 tbsp lemon juice, 2 tbsp water, and 1/4 tsp kosher salt until smooth and pourable; add another teaspoon of water only if needed. Set both aside. | Why: Coating the crumbs with oil helps them brown quickly, while loosening the tahini creates a sauce that can be drizzled instead of clumping.

    Season the salmon and finish roasting

    Pat 1 1/4 lb salmon fillet dry with paper towels and cut it into 4 even portions if it is whole. Brush the tops with 1 tbsp olive oil, then season with 1/2 tsp kosher salt and 1/4 tsp black pepper. Remove the pan from the oven and push the carrots to one side. Place the portions skin-side down on the open space and press the seasoned crumb mixture evenly over their tops. Return the pan to the center rack and roast for 10–12 minutes, until the thickest portion flakes easily when pressed with a fork and reaches 145°F in the center. If the crumbs need more color, broil on the upper rack for 30–60 seconds, watching constantly. | Why: Patting the fish dry improves browning, and adding it partway through prevents the delicate salmon from overcooking while the carrots finish.

    Warm and season the chickpeas

    While the salmon cooks, drain and rinse 2 cans chickpeas in a colander, then shake them dry. Warm 1 tbsp olive oil in a medium skillet over medium heat. Add the chickpeas and cook for 4–5 minutes, stirring occasionally, until hot and a few are lightly golden. Stir in 1 tbsp lemon juice, 1/4 tsp ground cumin, 1/4 tsp kosher salt, and 1/4 tsp black pepper. Turn off the heat and fold in 2 tbsp chopped fresh parsley. Taste and adjust only if needed. | Why: Warming the chickpeas makes the plate feel complete, while lemon, cumin, and parsley give them enough flavor to balance the rich fish.

    Rest, plate, and serve

    Let the salmon rest on the pan for 3 minutes; the topping will firm as the fish settles. Divide the warm chickpeas and roasted carrots among 4 plates. Set one salmon portion on each plate and drizzle with the tahini dressing. Finish with 1 tbsp chopped fresh parsley and serve immediately while the crumb topping is crisp and the salmon is moist. | Why: A short rest protects the fish’s juiciness, and adding the dressing at the table keeps the crunchy topping from becoming soggy.
