- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin

Set up the pan and prepare the chickpeas
Position a rack in the center of the oven and heat it to 425°F. Line a rimmed baking sheet completely with parchment paper, then set it beside the work area. Open, drain, and rinse 30 oz chickpeas in a colander; shake off water, then spread them on a clean kitchen towel or paper towels and dry very thoroughly. Transfer the dry chickpeas to a large bowl and toss with 1 tbsp olive oil, 1 tsp smoked paprika, 1 tsp ground cumin, 1/2 tsp garlic powder, 1/2 tsp kosher salt, and 1/4 tsp black pepper until evenly coated. Season and roast the vegetables
Wash and dry 1 red bell pepper and 1 zucchini. Remove the pepper stem and seeds, then cut it into 1-inch pieces; trim the zucchini and cut it into 1/2-inch half-moons. Add both to the bowl used for the chickpeas and toss with 1 tbsp olive oil, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Scatter the vegetables around the chickpeas on the lined sheet, keeping everything in as close to a single layer as possible. Make the lemon feta yogurt and fresh topping
While the pan roasts, wash and dry 1 lemon, then finely grate its zest and squeeze its juice. In a small bowl, whisk 1 cup plain Greek yogurt, 2 oz feta cheese, 1 tbsp lemon juice, 1 tsp lemon zest, 1/4 tsp kosher salt, and 2 tbsp water until smooth and spoonable. Taste and adjust with a pinch of salt if needed. Wash, dry, and thinly slice 1 cup romaine lettuce; wash, dry, and halve 1 cup cherry tomato.
