Ingredients

  • 1 lb ground turkey
  • 0.5 cup panko breadcrumb
  • 1 large egg
  • 0.5 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.75 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oils
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1.5 cup low-sodium chicken broths
  • 1 cup pearl couscous
  • 1 cup plain greek yogurt
  • 0.5 cucumber, finely diced
  • 1 tbsp lemon juice
  • 1 tbsp fresh mint, chopped
  • 0.25 tsp kosher salt
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsleies, chopped
  • 1 tbsp olive oil
  • 0.33 cup pumpkin seed

Instructions

  1. 01

Set up and prepare the produce

Position one rack in the center of the oven and another just below it. Line a large rimmed baking sheet with parchment, and set a wire rack over a second rimmed sheet if available. Preheat the oven to 425°F (220°C). Wash and dry the cauliflower, lemon, cucumber, mint, and parsley. Trim the cauliflower into small florets, finely chop the red onion, mince the garlic, halve the lemon, and finely chop the herbs. Measure everything before mixing. 1 head cauliflower should yield bite-size florets; keep them fairly uniform so they brown at the same rate. | Why: Preparing the equipment and produce first prevents rushed chopping while the oven heats and keeps the cooking sequence orderly.

  2. 02

    Season and shape the kofta

In a large bowl, combine 1 lb ground turkey, 1/2 cup panko breadcrumbs, 1 large egg, 1/2 red onion, 2 garlic cloves, 1 tsp ground cumin, 1 tsp smoked paprika, 3/4 tsp kosher salt, and 1/4 tsp black pepper. Mix with clean hands or a fork just until evenly combined; do not compact the mixture. Divide it into 12 portions and shape each into a short oval about 2 inches long. Place the shaped pieces on the prepared wire rack or parchment-lined sheet, leaving space between them. Wash your hands and any utensils that touched the raw mixture with hot, soapy water. | Why: Gentle mixing keeps the turkey tender, while small, evenly sized pieces cook through at the same time.

  3. 03

    Roast the kofta and cauliflower

Toss the prepared florets with 2 tbsp olive oil, 1/2 tsp kosher salt, and 1/4 tsp black pepper directly on the lined baking sheet. Spread them in one layer, leaving room for browning. Put the sheet on the lower rack and place the kofta on the center rack. Roast for 18 minutes, turning the florets once halfway through. The kofta are done when their centers reach 165°F (74°C) on an instant-read thermometer and their surfaces are browned; the florets should have deeply golden edges and a fork-tender center. Remove both pans from the oven. If the kofta finish first, transfer them to a clean plate while the vegetables continue roasting. | Why: Separate rack positions let the turkey cook safely while high heat caramelizes the cauliflower instead of steaming it.

  4. 04

    Cook the couscous

While the roasting continues, bring 1 1/2 cups low-sodium chicken broth to a simmer in a small saucepan. Stir in 1 cup pearl couscous, cover, reduce the heat to low, and simmer for 10 minutes, stirring once. Turn off the heat and let it stand, covered, for 5 minutes. Fluff with a fork until the grains are separate and tender but still pleasantly springy. | Why: Covered resting lets the couscous absorb the broth evenly without becoming wet or gummy.

  5. 05

Make the cool sauce and finish the couscous

In a small bowl, stir together 1 cup plain Greek yogurt, 1/2 cucumber, 1 tbsp lemon juice, 1 tbsp chopped fresh mint, and 1/4 tsp kosher salt. Taste and adjust only with the remaining roasted-pan seasoning if needed. In the warm couscous, fold in 1 tbsp lemon juice, 2 tbsp chopped fresh parsley, and 1 tbsp olive oil. Let the couscous cool for 3 to 5 minutes so it stays fluffy rather than melting the sauce at serving. | Why: The yogurt mixture supplies cool contrast, while lemon and herbs brighten the rich roasted components.

  6. 06

Toast the finishing crunch and serve

Warm a dry small skillet over medium heat for 1 minute. Add 1/3 cup pumpkin seeds and toast for 2 to 3 minutes, shaking often, until fragrant and lightly browned; immediately transfer them to a plate so they do not scorch. Spoon the fluffy couscous into four bowls. Add the roasted florets and three kofta to each bowl, then top with the cool sauce and toasted seeds. Serve immediately while the edges are crisp and the centers are hot. | Why: Toasted seeds add a nutty, crackly contrast that makes the tender bowl more satisfying without a complicated extra garnish.
