  • 0.25 tsp black pepper, freshly ground
  • 14.5 oz canned diced tomatoes, with juices
  • 1.5 cup shredded sharp cheddar cheeses
  • 2 tbsp fresh parsleies, finely chopped

    Heat the oven and prepare the peppers

    Set an oven rack in the center position and heat the oven to 400°F. Line a 9-by-13-inch baking dish with foil, leaving a small overhang for easy cleanup, then brush the foil with 1 tbsp olive oil. Wash and thoroughly dry 4 each bell peppers. Halve them lengthwise through the stems, remove the seeds and white ribs, and arrange the halves cut-side up in the lined, greased dish. Cook, stirring, until the onion is soft and fragrant, about 4 minutes. Stir in 14.5 oz canned diced tomatoes and simmer until the juices lightly coat the beef, about 3 minutes.     Remove the baking dish from the oven and carefully spoon the beef-and-rice filling into the pepper halves, mounding it slightly. Return the dish to the oven and bake until the cheese is melted with browned spots and the peppers yield easily when pierced with a paring knife, 12 to 15 minutes. Let stand for 5 minutes.
