Roast the carrots and start the lentils
Place an oven rack in the center position and preheat the oven to 425°F. Line a rimmed baking sheet with parchment. Wash, peel, and cut 450 g carrots into 1-inch pieces. Toss them on the sheet with 1 tbsp olive oil, 0.5 tsp kosher salt, and 0.25 tsp black pepper; spread them in one layer. Roast for 22–25 minutes, turning once, until browned at the edges and easily pierced with a fork. Meanwhile, rinse 150 g dry brown lentils under cool water and pick out any debris. Put them in a medium saucepan with 750 ml water. Bring to a boil over medium-high heat, then reduce to a gentle simmer and cook uncovered for 20–22 minutes, until tender but not falling apart. Cook the pasta and make the crunchy topping
Bring a large pot of water to a rolling boil. Add 340 g rigatoni and cook according to the package directions until al dente, usually 10–12 minutes. Before draining, reserve 250 ml pasta cooking water, then drain the pasta; do not rinse it. While the pasta cooks, warm a large skillet over medium heat. Add 60 g panko breadcrumbs and toast for 3–4 minutes, stirring often, until evenly golden. Stir in 1 tsp lemon zest, transfer the crumbs to a small bowl, and wipe out the skillet. | Why: Saving starchy cooking water gives the sauce a smooth, clingy texture, while toasting the crumbs separately keeps them crisp.

Add 2 garlic cloves, minced, and 1 tsp smoked paprika; cook for 30 seconds, just until fragrant. Add the drained lentils and roasted vegetables, then pour in 350 ml vegetable broth. Simmer for 4 minutes. Transfer the mixture to a blender, add 120 ml heavy cream, and blend carefully, starting on low and increasing gradually, until smooth. If the sauce is too thick to blend, loosen it with up to 60 ml of the reserved cooking water. Return the sauce to the skillet over low heat. Stir in 0.5 tsp kosher salt and 0.25 tsp black pepper, taste, and adjust only if needed. Fold in 100 g baby spinach and cook for 1 minute, just until wilted. Turn off the heat and stir in 40 g finely grated Parmesan cheese and 1 tbsp lemon juice. Taste for balance; the finished sauce should be savory, lightly smoky, creamy, and bright. Let the pasta rest in the skillet for 2 minutes so the sauce settles. Divide among four warmed bowls. Top with the reserved lemon crumbs and finish with 10 g fresh parsley, chopped.
