Ingredients

  • 1 tbsp olive oil
  • 1 lb chicken sausage, casings removed if needed
  • 1 yellow onion, thinly sliced
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
  • 1 apple, cored and sliced into wedges
  • 0.5 green cabbage, thinly sliced
  • 1 cup low-sodium chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 4 cup low-sodium chicken broths
  • 1 cup yellow cornmeal
  • 1 cup sharp cheddar cheese, finely shredded
  • 2 tbsp fresh parsleies, finely chopped
  • 1 lemon, cut into wedges

Instructions

  1. 01

    Prepare the workspace and produce

Set out a large heavy skillet, a 3-quart saucepan, a whisk, a chef’s knife, a cutting board, a colander, measuring spoons, and a liquid measuring cup. Wash the apple, cabbage, parsley, and lemon under cool running water; dry them thoroughly. Halve, core, and slice the apple into 1/4-inch wedges, thinly slice the cabbage, finely chop the parsley, and cut the lemon into wedges. Measure the remaining ingredients before heating anything. Keep raw poultry products refrigerated until the skillet is ready for them. | Why: Organizing and drying the produce first prevents splattering and keeps the cooking sequence smooth.

  2. 02

Brown the sausage and soften the aromatics

Place the large skillet over medium-high heat for 1 minute. Add 1 tbsp olive oil, then add 1 lb chicken sausage, breaking it into bite-size pieces with a wooden spoon. Cook for 5 minutes, stirring occasionally, until browned and the center reaches 165°F. Add 1 medium yellow onion, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp smoked paprika. Cook for 3 minutes, stirring, until the onion begins to soften and the sausage is deeply browned. Add 1 medium apple, toss to coat, and cook for 2 minutes until the edges lightly caramelize. Transfer the browned mixture to a clean bowl, leaving any flavorful fat in the skillet. | Why: Browning builds savory flavor, while adding the apple after the onion helps it stay pleasantly firm.

  3. 03

    Make the cider-glazed cabbage

Return the skillet to medium heat. Add 1/2 medium green cabbage, tossing it through the browned cooking juices for 2 minutes. Pour in 1 cup low-sodium chicken broth, then stir in 1 tbsp apple cider vinegar, 1 tbsp maple syrup, and 1 tbsp Dijon mustard. Bring the liquid to a gentle simmer, scraping up any browned bits. Cover and cook for 7 minutes, then uncover and simmer for 3 minutes more, stirring once, until the cabbage is glossy and tender-crisp rather than limp. Return the reserved browned mixture to the skillet and keep it over low heat while the polenta cooks. | Why: A short covered simmer softens the cabbage, while the uncovered finish concentrates the sweet-tart glaze.

  4. 04

    Cook the cheddar polenta

While the skillet stays on low, bring 4 cups low-sodium chicken broth to a boil in the 3-quart saucepan over medium-high heat. Slowly whisk in 1 cup yellow cornmeal, pouring in a thin stream to prevent lumps. Reduce the heat to low and cook for 12 minutes, whisking every 2 minutes, until the grains are tender and the mixture is thick enough to briefly hold the trail of the whisk. Remove the saucepan from the heat and stir in 1 cup sharp cheddar cheese until melted and smooth. If the polenta becomes too thick, loosen it with 1 to 2 tablespoons of warm water. | Why: Gradual whisking makes lump-free polenta, and the residual heat melts the cheese without making it oily.

  5. 05

    Rest, garnish, and serve

Turn off the skillet and let the glazed mixture rest for 2 minutes. Stir 2 tbsp fresh parsley into the skillet. Taste the polenta and the skillet mixture separately; add a small pinch of salt only if needed. Spoon the creamy polenta into four warm shallow bowls, top with the cabbage and browned pieces, and serve with 1 medium lemon cut into wedges for squeezing at the table. Serve immediately while the polenta is fluid and the cabbage is still glossy. | Why: A brief rest lets the glaze cling, while fresh parsley and lemon sharpen the rich, sweet-savory flavors.
