Instructions
- 01
Prepare the oven, vegetables, and lemon-dill yogurt
Place an oven rack in the upper-middle position and preheat the oven to 220°C / 425°F. Line a large rimmed baking sheet with parchment. Scrub and dry 680 g baby potatoes, trim 340 g green beans, and halve the potatoes if they are larger than a walnut. Finely zest and juice 1 lemon, reserving 1 teaspoon of the zest and 2 tablespoons of the juice for the yogurt. Stir 180 g plain Greek yogurt, the reserved zest, 2 tablespoons of juice, and 15 g fresh dill, finely chopped, in a small bowl. Season with 1 g fine salt and 0.5 g black pepper. Refrigerate until serving. | Why: Preparing the cool sauce first lets its flavors blend while the vegetables roast and keeps the final meal moving smoothly.

Roast the potatoes and green beans
Toss the prepared potatoes with 30 ml olive oil, 2 g fine salt, and 1 g black pepper directly on the lined baking sheet. Arrange them cut-side down and roast for 18 minutes, until the undersides are beginning to brown and a knife meets slight resistance. Add the prepared green beans, toss them with the hot pan juices, and roast for 8 to 10 minutes more. The potatoes should be fork-tender and the beans bright green with lightly blistered edges. Remove the sheet from the oven, but leave the oven on. | Why: Starting the dense vegetables before the fish gives everything a shared finish time while high heat concentrates their flavor.

Bread and bake the tilapia
While the vegetables roast, pat dry 4 tilapia fillets, each about 170 g, and check for any pin bones. Set out three shallow dishes containing 60 g all-purpose flour, 2 large eggs, beaten, and 120 g panko breadcrumbs. Season the flour with 2 g fine salt, 1 g black pepper, and 2 g smoked paprika. Coat each fillet in the seasoned flour, shake off excess, dip into the beaten eggs, then press firmly into the crumbs so the surface is evenly covered. Place the breaded fillets on a lightly oiled area of the baking sheet or a second lined sheet. Bake at 220°C / 425°F for 10 to 12 minutes, turning once after 7 minutes if the crust is browning unevenly. The fish is ready when the coating is deeply golden and the thickest part flakes easily and reaches 63°C / 145°F. Rest for 3 minutes. | Why: The dry-wet-dry coating creates a crisp shell, while the temperature check confirms the delicate fish is safely cooked without drying it out.

Make the warm apple-Dijon dressing
Heat a large skillet over medium heat. Add 15 g unsalted butter and let it foam without browning. Add 1 shallot, finely chopped, and cook for 2 minutes until softened. Stir in 1 crisp apple, cored and cut into thin wedges, and cook for 2 minutes until just tender but still holding its shape. Whisk 15 g Dijon mustard, 20 ml maple syrup, the remaining lemon juice, and 30 ml water in a cup. Pour the mixture into the skillet and simmer for 1 to 2 minutes, scraping up any browned bits, until glossy and lightly thickened. Taste and adjust with 1 g fine salt and 0.5 g black pepper. Fold in the roasted vegetables just long enough to warm them, about 1 minute. | Why: Gentle cooking preserves the apple's fresh bite, while the tangy-sweet liquid turns the skillet juices into a balanced dressing.

Plate and serve
Divide the warm apple-dressed vegetables among four plates. Set one rested fillet beside each portion and spoon 60 g lemon-dill yogurt over or alongside the fish. Garnish with 10 g fresh dill, finely chopped, and serve immediately while the crumb is crisp. For food safety, refrigerate leftovers in a shallow covered container within 2 hours and use them within 2 days; reheat the fish and vegetables to 74°C / 165°F. | Why: Serving the cool yogurt at the table protects its freshness and gives the crisp fish, tender vegetables, and bright dressing a pleasing contrast.
