Skillet Beef Kofta with Herbed Bulgur and Cucumber-Tomato Salad
Juicy, warmly spiced beef kofta are browned in a skillet and served over fluffy lemony bulgur with a crisp cucumber-tomato salad and cooling garlic yogurt. A quick broil-style sear gives the kofta deeply caramelized edges without requiring a grill.

Prepare the workspace and bulgur
Set out a medium saucepan with a lid, a large skillet, a mixing bowl, a small bowl, a chef’s knife, a cutting board, and a shallow serving platter. Wash and dry the fresh produce. Finely dice 1/2 medium red onion; reserve half for the kofta and half for the salad. Mince 2 garlic cloves; reserve half for the kofta and half for the yogurt. Finely chop 1/2 cup fresh parsley; reserve 2 tablespoons for the yogurt and the remainder for the bulgur and salad. Measure 1 1/2 cups dry bulgur and 2 cups water. Combine them in the saucepan with 1/2 tsp fine salt, bring to a boil over high heat, then cover, reduce to low, and simmer for 12 minutes, or until the water is absorbed and the grains are tender. Remove from the heat and keep covered for 5 minutes. | Why: Starting the grain first gives it time to steam and become fluffy while the remaining components are prepared.

Mix and shape the kofta
While the bulgur cooks, place 500 g lean ground beef in the large mixing bowl. Add the reserved half of the diced onion and minced garlic, plus 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp ground coriander, 1/4 tsp cayenne pepper, 1 tsp fine salt, and 1/2 tsp black pepper. Add 2 tablespoons of the chopped parsley. Mix with clean hands just until evenly combined; do not compact the mixture. Divide it into 12 equal portions and shape each into a 7 cm oval, about 2 cm thick. Place the shaped kofta on a plate, wash your hands and the work surface with hot soapy water, and pat the kofta dry if any moisture beads on the surface. | Why: Gentle mixing keeps the beef tender, while thin ovals brown quickly and cook evenly.

Make the salad and yogurt
Dice 2 medium tomatoes and 1 English cucumber into 1 cm pieces. Put them in a bowl with the reserved half of the diced onion, the remaining chopped parsley, 1 tbsp extra-virgin olive oil, 1 tbsp fresh lemon juice, and 1/4 tsp fine salt. Toss gently and set aside for 10 minutes. In the small bowl, stir 1 cup plain Greek yogurt, the reserved half of the minced garlic, 1 tbsp fresh lemon juice, and 1/4 tsp fine salt until smooth. Refrigerate the yogurt until serving. | Why: Brief salting seasons the vegetables and draws out excess moisture, while lemon and garlic make a bright counterpoint to the rich kofta.

Sear the kofta
Place the large skillet over medium-high heat for 2 minutes. Add 1 tbsp neutral cooking oil and swirl to coat; the oil should shimmer but not smoke. Arrange the kofta in a single layer, leaving space between pieces. Cook for 4 minutes without moving until the undersides are deeply browned, then turn and cook for 3 to 4 minutes more, turning once or twice, until all sides are browned and the centers reach 71°C on an instant-read thermometer. If the pan browns too quickly, reduce the heat to medium.
