  • 1 tbsp fresh ginger, peeled and finely grated
  • 2 peaches, pitted and diced
  • 2 roma tomatoes, diced
  • 2 tbsp apple cider vinegars
  • 1 tbsp brown sugar
  • 0.25 tsp crushed red pepper flakes
  • 0.25 tsp kosher salt
  • 14 oz paneer, patted dry and cut into 3/4-inch cubes
  • 3 tbsp cornstarches
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper, freshly ground
  • 2 tbsp olive oils
  • 1 lime, zested and juiced
  • 1 tbsp lime juice, freshly squeezed
  • 0.75 cup plain greek yogurt
  • 2 tbsp waters
  • 0.25 tsp kosher salt

Instructions

    Rinse and cook the mint rice

    Set a fine-mesh sieve over the sink. Rinse 1 1/2 cups basmati rice under cold running water, rubbing the grains gently, until the water runs mostly clear; drain very well. Put the rice in a medium saucepan with 2 1/4 cups water and 1/2 tsp kosher salt. Bring to a boil over high heat, uncovered. Stir once, cover tightly, reduce to the lowest heat, and cook for 12 minutes. Remove the covered pan from the heat and let it stand for 10 minutes without lifting the lid. | Why: Rinsing removes excess surface starch, while the covered rest finishes steaming the grains into fluffy rice.
