Wash your hands and clear a stable work surface. Set out a large deep skillet with a lid, a medium saucepan with a lid, a chef’s knife, cutting board, measuring spoons, a can opener, a fine grater, and a fork. Place a rack in the center of the oven only if you plan to keep the finished skillet warm; otherwise, no oven is needed. Prepare four shallow serving bowls. Pat 680 g boneless, skinless chicken thighs very dry with paper towels. Trim any large flaps of fat, then cut the thighs into 4 cm pieces. Add the seasoned chicken in a single layer, working in batches if necessary, and sear for 3 minutes per side until deeply browned but not cooked through; transfer it to a clean plate. Lower the heat to medium, add the sliced onion, and cook for 4 minutes until softened and lightly golden. Stir in the minced garlic for 30 seconds until fragrant, then stir in the paprika and cumin for 20 seconds. Bring the mixture to a gentle bubble over medium heat, cover, and simmer for 12 minutes. Uncover and simmer for 5 minutes more, stirring once, until the chicken reaches 74°C at the thickest piece and the sauce lightly coats a spoon. Cook the lemon couscous

Uncover, fluff with a fork, and squeeze in the juice from the lemon halves, avoiding seeds.
