  • 680 g chicken thighs, bone-in, skin-on
  • 1 tsp kosher salt
  • 0.5 tsp black pepper, freshly ground
  • 2 shallots, peeled and thinly sliced
  • 3 garlic cloves, peeled and minced
  • 250 g dry orzo
  • 600 ml low-sodium chicken stock
  • 1 lemon, zested and juiced
  • 120 g frozen peas
  • 60 g baby spinaches, washed and dried
  • 80 ml heavy creams
  • 40 g parmesan, finely grated
  • 15 g fresh parsleies, finely chopped

    Prepare the pan and chicken

    Set a large oven-safe skillet, tongs, a cutting board, and a chef’s knife beside the work area. Pat the chicken dry with paper towels; trim any loose excess skin or fat, then wash and dry the lemon, shallot, parsley, and spinach. Preheat the oven to 425°F (220°C). Measure the seasonings. Rub 1 tbsp olive oil over 680 g bone-in, skin-on chicken thighs, then season both sides with 1 tsp kosher salt and ½ tsp black pepper. Let the seasoned pieces stand at room temperature for 10 minutes while the oven heats. | Why: Dry skin and a short rest promote even browning and better seasoning adhesion.

    Brown the chicken and shallots

    Place the skillet over medium-high heat for 2 minutes. Arrange the chicken skin-side down and cook for 6–8 minutes, undisturbed, until the skin is deeply golden and releases easily from the pan. Turn the pieces and cook for 2 minutes more, then transfer them to a plate; they will finish cooking later. Keep about 1 tablespoon of rendered fat in the skillet and carefully discard any excess. Peel and thinly slice 2 shallots, then add them to the hot fat. Cook for 3–4 minutes, stirring often, until the slices are browned at the edges and crisp. Transfer the shallots to a small bowl, leaving the fat behind. | Why: Rendering and browning build savory flavor, while removing the crisp topping prevents it from softening.

    Build the lemon orzo base

    Reduce the heat to medium. Peel and mince 3 garlic cloves, add them to the skillet, and stir for 30 seconds until fragrant but not colored. Add 250 g dry orzo and toast for 2 minutes, stirring, until the grains look lightly glossy. Pour in 600 ml low-sodium chicken stock and scrape up any browned bits. Wash and zest 1 lemon, then squeeze it to measure 2 tbsp lemon juice; stir both into the skillet. Bring the liquid to a gentle simmer, stirring once, and cook for 5 minutes until the orzo is partly tender and still quite loose. | Why: Toasting gives the grains a nutty backbone, while early citrus perfumes the cooking liquid.

    Finish the creamy skillet

    Stir in 120 g frozen peas, 60 g baby spinach, 80 ml heavy cream, and 40 g grated Parmesan. Cook for 2 minutes, stirring gently, until the peas are hot, the greens are wilted, and the sauce lightly coats the grains. Nestle the browned chicken skin-side up into the orzo, along with any juices from the plate. Move the skillet to the preheated oven and bake for 10–12 minutes, until the thickest chicken piece reaches 165°F (74°C) on an instant-read thermometer and the orzo bubbles at the edges. If the skin needs more color, broil for 1–2 minutes while watching closely. | Why: The dairy and cheese create a glossy sauce, and the oven finishes the poultry without drying the grains.

    Rest, garnish, and serve

    Remove the skillet from the oven and place it on a heatproof surface. Rest for 5 minutes; the sauce will thicken and the poultry juices will settle. Finely chop 15 g fresh parsley. Scatter the parsley and the reserved crisp shallots over the skillet. Taste the orzo and adjust only if needed with a small pinch of salt or a few grinds of pepper. Spoon the creamy grains onto four warm plates and top each with a chicken thigh.
