Prepare the pan and season the chicken and cauliflower
Position a rack in the center of the oven and heat the oven to 425°F. Line a rimmed baking sheet with parchment paper, then lightly grease the lined sheet with 1 tbsp olive oil. Pat 1.5 lb boneless skin-on chicken thighs very dry with paper towels. On one side of the lined, greased sheet, toss 700 g cauliflower florets with 1 tbsp olive oil, 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Arrange the cauliflower in a single layer. Rub the remaining 1 tbsp olive oil, 1/2 tsp kosher salt, and 1/4 tsp black pepper over the chicken, then place it skin-side up beside the cauliflower without crowding. | Why: Dry chicken and a hot, greased, lined pan promote crisp skin, while an even layer lets the cauliflower brown rather than steam.

Roast until browned and juicy
Roast the sheet-pan meal for 20 to 25 minutes, stirring the cauliflower once after 15 minutes and leaving the chicken skin-side up. It is ready when the cauliflower is browned and tender at its thickest pieces, the skin is deeply golden, and the thickest chicken thigh reads 165°F on an instant-read thermometer. Meanwhile, finely chop 1/3 cup pitted dates, finely grate 1 tsp lemon zest, juice 1 tbsp lemon juice, and chop 1/4 cup fresh parsley.
