Ingredients

  • 2 butter beans, rinsed, drained, and patted dry
  • 5 oz baby spinaches, washed and dried
  • 1 lemon, washed
  • 1 red bell pepper, seeded and diced
  • 4 garlic cloves, peeled and minced
  • 1 crushed tomato, opened
  • 4 oz feta cheeses, crumbled
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.25 tsp red pepper flake
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 4 crusty breads, sliced
  • 2 tbsp olive oils
  • 1 tbsp olive oil
  • 1 tsp lemon zest, finely grated
  • 1 tbsp lemon juice, freshly squeezed

Instructions

  1. 01

    Prepare the ingredients and oven

Position an oven rack in the upper-middle position and heat the oven to 425°F. Set out a large ovenproof skillet, a baking sheet, a cutting board, a chef’s knife, a fine grater, and a colander. Rinse 2 cans butter beans, drain them thoroughly, and pat them dry. Wash and dry 5 oz baby spinach, 1 lemon, and 1 small red bell pepper. Halve the bell pepper, remove its seeds, and dice it; peel and mince 4 garlic cloves. Drain 1 can crushed tomatoes if it contains excess watery liquid. Crumble 4 oz feta cheese into bite-size pieces. Measure 1 tsp smoked paprika, 1/2 tsp dried oregano, 1/4 tsp red pepper flakes, 1/2 tsp kosher salt, and 1/4 tsp black pepper. Slice 4 thick slices crusty bread. | Why: Thoroughly dried beans brown more readily, while organized prep keeps the skillet cooking smoothly and safely. 2. 02

    Build the tomato-bean skillet

Place the ovenproof skillet over medium heat. Add 2 tbsp olive oil, then add the diced bell pepper and cook for 4 minutes, stirring occasionally, until glossy and beginning to soften. Stir in the minced garlic, smoked paprika, dried oregano, and red pepper flakes; cook for 30 seconds, until fragrant but not browned. Add the crushed tomatoes, butter beans, kosher salt, and black pepper. Stir, bring the sauce to a gentle simmer, and cook uncovered for 8 minutes, stirring once or twice, until the sauce lightly coats the beans. | Why: Blooming the spices in oil deepens their flavor, while simmering concentrates the tomato sauce before the cheese is added.

  3. 03

Add feta and toast the bread

Scatter the crumbled feta evenly over the simmering beans. Arrange the bread slices on the baking sheet and brush them with 1 tbsp olive oil. Transfer the skillet and baking sheet to the oven. Bake for 8–10 minutes, until the sauce is bubbling at the edges, the feta has softened with lightly browned spots, and the toast is crisp and golden. If the toast browns early, remove the baking sheet and let the skillet finish. | Why: High heat turns the feta creamy and browned while creating a crisp contrast for dipping into the saucy beans.

  4. 04

Wilt the greens and season with lemon

Remove the skillet from the oven and place it on a heatproof surface. Immediately fold in the baby spinach in two additions, allowing the first handful to wilt for about 30 seconds before adding the rest. Zest 1 tsp lemon zest over the skillet and squeeze in 1 tbsp lemon juice. Taste carefully and adjust the seasoning only if needed; the feta is already salty. Rest for 3 minutes, until the greens are tender and the sauce has settled. | Why: Residual heat gently wilts the greens and fresh citrus brightens the rich beans without making the sauce watery.

  5. 05

    Serve

Spoon the hot beans, wilted greens, and browned feta into four shallow bowls. Serve each portion with one crisp toast slice for dipping. Eat while hot, taking care with the ovenproof skillet and the bubbling sauce. | Why: A brief rest makes the sauce cling to the beans, and serving immediately preserves the contrast between creamy beans, crisp toast, and fresh greens.
