Harissa Turkey Meatballs with Roasted Carrots, Couscous & Lemon Tahini

Prepare the oven, pan, and carrots
Set a rack in the center of the oven and preheat it to 425°F (220°C). Line a large rimmed baking sheet with parchment. Wash and dry 450 g carrots; peel them if their skins are tough, then halve thicker ones lengthwise and cut everything into 2-inch pieces. Set the prepared carrots aside. | Why: Preheating now gives the meatballs and carrots immediate, even heat, while equal-sized carrot pieces finish together.

Mix and shape the meatballs
In a large bowl, combine 500 g ground turkey, 1 egg, 60 g panko breadcrumbs, 2 garlic cloves, 2 tbsp harissa paste, 1 tsp ground cumin, 1 tsp kosher salt, and 0.5 tsp black pepper. Mix with clean hands or a fork just until no dry pockets remain; do not compress the mixture. Divide it into 16 portions and roll each into a ball about 4 cm wide. Roast the meatballs and carrots
Place the prepared carrots on the lined baking sheet and toss them with 2 tbsp olive oil and 0.5 tsp kosher salt. Spread them in a single layer, leaving space between pieces. Nestle the meatballs among them. Roast for 20 minutes, turning the carrots and rotating the pan halfway through. Continue for 3–5 minutes, until the meatballs are browned and their centers reach 165°F (74°C) on an instant-read thermometer, and the carrots are fork-tender with browned edges. Cook the couscous
While the tray roasts, place 300 ml chicken broth in a small saucepan and bring it to a simmer over medium heat, about 4 minutes. Stir in 240 g couscous, cover, remove from the heat, and let stand for 5 minutes. Fluff with a fork; the grains should be tender and separate. In a small bowl, whisk 80 g tahini, 45 ml lemon juice, 60 ml warm water, and 0.25 tsp kosher salt until smooth and pourable; add another teaspoon of warm water only if needed. Wash, dry, and finely chop 15 g fresh parsley. Spoon the couscous onto four plates, arrange the rested meatballs and roasted carrots over it, drizzle with the lemon-tahini sauce, and scatter the parsley over the top.
