Whisk in 1/2 cup heavy cream and 1 tbsp Dijon mustard; bring to a gentle simmer and cook for 3–4 minutes, stirring, until the sauce lightly coats a spoon. Fold in 1 cup frozen peas, the browned chicken and any juices, and 1/4 tsp kosher salt. Remove the skillet from the heat.
