Ingredients

  • 4 sourdough bread slices
  • 2 tbsp unsalted butters, melted
  • 1 cup shredded sharp cheddar cheese
  • 12 oz refrigerated cheese tortellini
  • 0.5 cup heavy cream

    Preheat the oven and prepare the baking sheet

    Set a rack in the middle of the oven and preheat to 425°F (220°C). Line a rimmed baking sheet with parchment paper. Set a large pot, a cutting board, a knife, and a small microwave-safe bowl within reach. | Why: Starting the oven now means the toasts can bake while the soup simmers.

    Place 4 sourdough bread slices on the lined baking sheet. Brush the mixture over the bread and sprinkle evenly with 1 cup shredded sharp cheddar cheese. Put the sheet in the oven preheated in step 1 and bake at 425°F (220°C) for 8–10 minutes, until the cheese bubbles and the bread edges are golden.     Cook the tortellini

    When the soup has simmered for 10 minutes, raise the heat to medium to maintain a gentle boil.     Reduce the heat to low. Stir the prepared spinach into the soup and cook for about 1 minute, until wilted.
