  • 2 tbsp fresh cilantros, roughly chopped
  • 1 tbsp lime juice, freshly squeezed
  • 0.25 tsp fine salt
  • 450 g ground chickens
  • 1 cup corn kernel, thawed if frozen, drained, and patted dry
  • 0.5 cup shredded cheddar
  • 2 green onions, thinly sliced
  • 1 egg
  • 0.33 cup panko breadcrumbs
  • 1 tsp smoked paprika
  • 0.75 tsp fine salt
  • 0.25 tsp black pepper
  • 2 tbsp neutral oils

    Make the fresh relish

    Set out a cutting board, a sharp knife, a medium bowl, and a spoon. Rinse and dry the produce. Halve or quarter 1 cup cherry tomatoes into bite-size pieces; dice 1 avocado; roughly chop 2 tbsp fresh cilantro; then squeeze 1 tbsp lime juice. Add everything to the bowl with 1/4 tsp fine salt and fold gently so the avocado stays chunky. Cover and chill while you prepare the fritters, about 15 minutes. | Why: Making the relish first gives its flavors time to mingle while keeping its texture fresh.

    Mix and shape the fritters

    In a large bowl, combine 450 g ground chicken, 1 cup corn kernels, 1/2 cup shredded cheddar, 2 green onions, 1 egg, 1/3 cup panko breadcrumbs, 1 tsp smoked paprika, 3/4 tsp fine salt, and 1/4 tsp black pepper. Thaw the kernels first if frozen, drain well, and pat dry; thinly slice the green onions. Mix with clean hands or a fork just until evenly combined. Shape into 8 patties about 1/2 inch thick, setting them on a clean plate. Wash your hands and any surfaces that touched raw poultry. | Why: A brief, gentle mix keeps the patties tender, while evenly sized portions cook at the same rate.

    Pan-fry until golden and cooked through

    Place a large nonstick skillet over medium heat and let it warm for 2 minutes. Add 2 tbsp neutral oil and swirl to coat the bottom. Working in two batches, arrange 4 patties in the pan without crowding. Cook for 4–5 minutes, until the undersides are deep golden and release easily; flip and cook another 4–5 minutes. Check the thickest patty with an instant-read thermometer: it must reach 74°C (165°F). If needed, lower the heat and cook another minute or two, checking again. Transfer the cooked patties to a clean plate and repeat with the remaining patties, allowing the skillet to reheat briefly between batches. | Why: Medium heat browns the outside without leaving the centers undercooked; the thermometer confirms safe doneness.

    Rest briefly and serve
