Smoky Poblano-Corn Chicken Rice Bowls with Lime and Cheddar

Prepare the vegetables and corn
Set out a cutting board, knife, colander, and large skillet. Wash and dry 2 poblano peppers, remove the stems and seeds, and dice the flesh. Peel and dice 1 onion. Peel and mince 2 garlic cloves. Put 1.5 cups frozen corn in the colander; rinse under cool running water until thawed, about 1–2 minutes, then drain well and pat dry. Keep everything separate so it can be added at the right time. | Why: Dry corn browns instead of steaming, and prepping the vegetables first makes the skillet work easier.

Cook the rice
Rinse 1 cup long-grain white rice in a fine-mesh sieve under cold water until the runoff is less cloudy; drain. Put the rice and 2 cups water in a medium saucepan. Bring to a boil over high heat, cover, reduce to low, and cook for 15 minutes, until the water has absorbed and the grains are tender. Turn off the heat and leave covered for 5 minutes before fluffing with a fork. Season and cook the chicken
On a separate board, pat 1 lb boneless, skinless chicken thighs dry with paper towels and cut into 1-inch pieces. Heat 1 tbsp olive oil in the large skillet over medium-high heat until shimmering. Add the chicken in a single layer and cook for 7–9 minutes, turning occasionally, until browned and the thickest pieces register 165°F (74°C) on an instant-read thermometer. Add the drained corn and 0.5 tsp kosher salt and cook for 2–3 minutes until hot and lightly golden. Return the cooked chicken and any juices from its clean plate to the skillet and toss for 1 minute, until steaming hot.
