Ingredients

  • 1 tsp kosher salt
  • 0.5 cup all-purpose flour
  • 2 eggs, large
  • 1.5 cup panko breadcrumbs
  • 0.5 cup parmesan cheese, finely grated

  • 2 tbsp olive oils
  • 1.5 cup marinara sauce
  • 1.5 cup low-moisture mozzarella cheese, shredded
  • 4 sandwich rolls
  • 0.25 cup fresh basil leaf

  1. 01

    Set up and salt the eggplant

    Heat the oven to 425°F (220°C) with a rack in the center. Set a wire rack over a rimmed sheet pan and line the pan with parchment. Rinse and dry 2 each medium eggplants, trim the ends, and cut them crosswise into ½-inch rounds. Arrange the rounds on the rack, sprinkle both sides with 1 tsp kosher salt, and let stand for 15 minutes. Pat both sides thoroughly dry with paper towels; the surfaces should feel dry rather than slick. | Why: Salting draws out surface moisture so the coating can crisp instead of steam.

    While the rounds drain, set out three shallow dishes. Put ½ cup all-purpose flour in the first. Beat 2 large eggs in the second. During the final 3 minutes of baking, spoon a little warm sauce onto each round and top with 1½ cups shredded low-moisture mozzarella cheese. Return the pan to the oven until the cheese is fully melted and bubbling at the edges. Split 4 each sandwich rolls and toast them cut-side up on a separate pan for 3–4 minutes, until lightly crisp. Watch closely so they do not overbrown. | Why: Warming the sauce keeps the crisp coating from cooling, and a short melt gives the cheese time to bubble without softening the rounds.

    Assemble and serve

    Set the pan on a heat-safe surface and let the rounds rest for 2 minutes. Spoon a thin layer of the remaining warm sauce onto the toasted roll bottoms, add the cheesy rounds, and finish with ¼ cup fresh basil leaves.
