Smoky Mushroom Tacos with Charred Corn and Avocado Crema

Set a rack in the center of the oven and preheat it to 350°F (175°C); set out a rimmed baking sheet, a medium bowl, and a clean kitchen towel. Rinse and dry the vegetables, then finely shred 2 cups green cabbage and grate 1 medium carrot into the bowl. Brown the mushrooms and char the corn
Wipe clean and dry 1 1/2 lb cremini mushrooms, trim the stem ends, and slice them about 1/4 inch thick. Measure 1 tbsp neutral oil, 1 cup corn kernels, 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp dried oregano, 1/2 tsp fine salt, 2 tbsp tomato paste, and 1 tbsp soy sauce beside a large skillet. Heat the dry skillet over medium-high heat until a drop of water sizzles on contact. Add the corn and cook, stirring occasionally, for 3–4 minutes until hot and spotted with brown; transfer it to a plate. Add the oil, then arrange the sliced mushrooms in a single layer (work in two batches if needed). Leave undisturbed for 3 minutes, stir, and cook another 4–5 minutes until browned and most of their released liquid has evaporated. Return the corn to the pan. Stir in the cumin, paprika, oregano, salt, tomato paste, and soy sauce; cook for 1–2 minutes, stirring, until the paste darkens slightly and coats the filling.
