Set up and chop the salad
Set a large skillet, wooden spoon, two mixing bowls, cutting board, knife, and measuring spoons on the counter. Wash and dry 1 cucumber, 2 tomatoes, and 1/4 cup fresh parsley. Dice the cucumber and tomatoes into roughly 1/2-inch pieces; finely chop the parsley. Put them in one bowl. | Why: Small, evenly cut pieces tuck neatly into the pitas and give every bite some crunch.

Dress the crunchy salad

Add 1 lb ground beef to the skillet. Break it into small crumbles with the spoon, then stir in 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp fine salt, and 1/4 tsp ground black pepper. Cook over medium-high heat for 7–9 minutes, stirring occasionally, until no pink remains, the crumbles have browned edges, and the center of the meat reaches 160°F (71°C) on an instant-read thermometer. If there is excess fat, tilt the pan and spoon it into a heatproof container; let it cool before discarding.
