Instructions
- 01
Prepare the oven and baking sheet
Set an oven rack in the center and heat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper rated for 425°F. Set out three shallow bowls and a large skillet for the following steps. | Why: Lining the sheet before breading the cutlets makes their transfer clean and keeps the coating intact.
- 02
Season and coat the chicken
Pat 1.25 lb chicken breast cutlets dry; if any are much thicker than 1/2 inch, gently pound them between sheets of plastic wrap to an even 1/2 inch. Season both sides with 0.5 tsp kosher salt and 0.25 tsp black pepper. Put 0.25 cup all-purpose flour in the first bowl. Beat 1 egg in the second. In the third, mix 0.75 cup panko breadcrumbs, 0.5 cup Parmesan cheese, and 1 tbsp ranch seasoning mix. Coat each cutlet in flour, dip in egg, then press firmly into the crumb mixture. Arrange the coated cutlets in one layer on the lined baking sheet and drizzle with 1 tbsp olive oil. | Why: Even thickness helps the chicken finish together, while the flour, egg, and seasoned crumbs form a crust that clings.
- 03
Bake the cutlets until crisp
Put the lined baking sheet into the fully heated oven. Bake for 18–22 minutes, rotating the sheet once halfway through, until the coating is golden and an instant-read thermometer inserted into the thickest part of each cutlet reads 165°F (74°C). Start the orzo in the next step while the cutlets bake. Once cooked, take the sheet out of the oven and let the chicken rest on it for 3 minutes. | Why: Baking sets the crunchy coating without pan-frying, and a brief rest keeps the cutlets juicy.

Cook the ranchy corn and tomato orzo
While the chicken bakes, peel and mince 2 garlic cloves. Wash and dry 1 cup cherry tomatoes, then halve them. Heat 1 tbsp olive oil in the large skillet over medium heat for about 1 minute. Stir in the garlic for 30 seconds, until fragrant but not brown. Add 1 cup dry orzo and stir for 1 minute to lightly toast it. Stir in 1 cup frozen corn kernels, the tomatoes, 2 cups low-sodium chicken broth, and 1 tbsp ranch seasoning mix. Bring to a simmer, then cook uncovered over medium-low heat for 10–12 minutes, stirring frequently, until the orzo is tender and glossy with a little saucy liquid remaining. If the skillet dries out before the orzo is tender, stir in a splash of water; taste and adjust seasoning only if needed, since the ranch mix and broth contain salt. | Why: Toasting the orzo adds flavor, and simmering it with the vegetables creates a lightly creamy sauce without cream.

Finish with lemon, herbs, and serve
Wash and dry 1 lemon; cut it in half. Wash and dry 0.25 cup fresh parsley, then chop it. Take the orzo off the heat and stir in 0.5 cup Parmesan cheese, the juice of half the lemon, and most of the parsley. Taste; squeeze in more lemon juice if you want extra brightness. Spoon the orzo into four bowls, top each with a rested cutlet, and scatter over the remaining parsley. Serve immediately while the chicken is crisp and the orzo is warm and saucy. | Why: Finishing off the heat keeps the cheese smooth, while lemon and parsley balance the rich, savory topping.
