  • 1 lemon, zested, then halved
  • 1 cup water
  • 0.25 tsp kosher salt
  • 1 cup couscous, dry
  • 1 cup cherry tomato, halved
  • 2 garlic cloves, peeled and minced
  • 1 tbsp olive oil
  • 1 tbsp caper, drained
  • 2 tbsp fresh parsleies, chopped

    Heat the oven and prepare the pan

    Set a rack in the center of the oven and preheat to 425°F (220°C). Line a large rimmed baking sheet with parchment paper; leave it on the counter while you prepare the vegetables. Set out a small saucepan with a lid and a medium skillet for later. | Why: Lining the pan before adding food prevents sticking and makes the roasted vegetables easy to lift off.

    Wash and season the green beans

    Wash 12 oz green beans, trim the stem ends, and dry thoroughly. On the parchment-lined baking sheet, toss them with 1 tbsp olive oil, 1/4 tsp kosher salt, and 1/4 tsp black pepper. Spread in a single layer on one half of the sheet, leaving the other half empty for the fish. | Why: Drying encourages browning, and reserving space lets the fish bake without steaming.

    Start roasting and ready the salmon

    Roast the beans on the center rack for 8 minutes. While they roast, pat 1.25 lb skin-on salmon fillets (four roughly equal pieces) dry with paper towels. Rub the flesh with 1 tbsp olive oil and season all over with 1/2 tsp kosher salt and 1/4 tsp black pepper. Wash 1 lemon, finely grate its zest over the fish, then halve it and reserve the halves for the topping. | Why: A short head start softens the beans while drying and seasoning the fish promotes even cooking and bright flavor.

    Bake the salmon beside the beans

    Remove the sheet from the oven and gently stir the beans. Place the seasoned fillets skin-side down on the empty, parchment-lined half of the sheet, spaced apart. Return to the 425°F (220°C) oven and bake for 12–15 minutes, until the beans are tender with browned spots and the thickest part of each fillet reaches 145°F (63°C) on an instant-read thermometer. Move the sheet to a heatproof surface and let the fish rest 3 minutes. | Why: The already-lined, uncrowded pan keeps the fish from sticking and gives both foods room to roast.

    Cook and fluff the couscous

    While the fish bakes, bring 1 cup water and 1/4 tsp kosher salt to a boil in the small saucepan over medium-high heat. Stir in 1 cup dry couscous, cover, turn off the heat, and leave undisturbed for 5 minutes. Fluff with a fork; cover to keep warm. | Why: Trapped steam hydrates the grains evenly without making them gummy.

    Make the warm tomato-caper topping

    While the grains steam and the fish bakes, wash and halve 1 cup cherry tomatoes; peel and mince 2 garlic cloves. Heat 1 tbsp olive oil in the medium skillet over medium heat. Add the tomatoes and cook, stirring occasionally, for 5–6 minutes, until they soften and release juice. Stir in the garlic and 1 tbsp capers, drained, and cook 1 minute more, until fragrant. Turn off the heat and squeeze the reserved lemon halves into the skillet, catching and discarding any seeds. Wash, dry, and chop 2 tbsp fresh parsley; stir it into the topping. Taste and adjust with the already-measured seasonings if needed. | Why: Bursting the tomatoes makes a quick, juicy sauce, while lemon and capers balance the richness of the fish.
