Creamy Coconut-Lime Cod with Sweet Peppers and Rice

Start the rice
Put 1 cup long-grain white rice in a fine-mesh sieve; rinse under cold running water until the runoff is mostly clear, then drain well. Add it to a medium saucepan with 2 cups water and 1/2 tsp kosher salt. Bring to a boil over medium-high heat, stir once, cover, and turn the heat to low. Cook for 15 minutes, until the liquid is absorbed. Turn off the heat and leave covered for 10 minutes; then fluff with a fork. | Why: Rinsing keeps the grains distinct, and the covered rest finishes steaming them.

Prepare the vegetables and lime
While the rice cooks, peel and finely dice 1 medium yellow onion. Wash, dry, stem, seed, and slice 1 red bell pepper. Peel and mince 1 tbsp fresh ginger and 1 tbsp garlic. Pat 1 lb boneless cod fillets dry with paper towels, cut into 4 portions, and nestle them into the sauce. Scatter 1 cup frozen peas around the fish. Cover and simmer gently for 7–9 minutes, until the cod is opaque, flakes easily, and reaches 145°F (63°C) in its thickest part.
