Instructions
- 01
Thaw the pastry safely
The night before cooking, put 1 frozen puff pastry sheet in the refrigerator, still wrapped, to thaw overnight according to the package directions. Keep it refrigerated until the filling is ready; it should unfold without cracking but still feel cool. | Why: Slow thawing keeps the pastry pliable without softening its butter too much.
- 02
Prepare the oven, pie dish, and filling ingredients
Set a rack in the center of the oven and preheat to 400°F (205°C). Grease the inside and rim of a 9-inch deep-dish pie plate (at least 1½-quart capacity) with 1 tsp unsalted butter. Wash and dry 2 carrots and 8 oz cremini mushrooms; peel and dice the carrots, then slice the mushrooms. Peel and dice 1 onion; peel and mince 2 garlic cloves. Shred 12 oz cooked chicken into bite-size pieces. Wash, dry, and chop 2 tbsp fresh parsley. Set everything within reach of the stove. | Why: Preparing the dish and vegetables first lets the filling cook evenly and the pastry go straight into the oven.
- 03
Brown the vegetables
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the diced onion and carrots with 1/2 tsp kosher salt; stir for 4 minutes, until the onion begins to soften. Add the sliced mushrooms and cook for about 8 minutes more, stirring occasionally, until their liquid evaporates and the edges turn golden. Turn the heat down to medium. | Why: Evaporating the mushroom liquid prevents a watery pie and builds savory flavor.
- 04
Make the creamy thyme sauce
Add the prepared garlic and 2 tbsp unsalted butter to the skillet; stir for 30 seconds, until fragrant. Sprinkle in 3 tbsp all-purpose flour and cook, stirring, for 1 minute. Gradually whisk in 1 cup low-sodium chicken broth and 3/4 cup whole milk. Stir in 1 tsp Dijon mustard, 1/2 tsp dried thyme, 1/4 tsp ground black pepper, and 1/2 tsp kosher salt. Simmer gently for 4–5 minutes, stirring, until the sauce coats a spoon and the carrots are tender when pierced. | Why: Cooking the flour removes its raw taste, while gradual whisking makes a smooth, thick sauce.
- 05
Finish the filling
Stir 1 cup frozen peas, the prepared chicken, and the chopped parsley into the sauce. Cook over medium heat for about 2 minutes, until the peas are hot and the filling is steaming; taste and adjust seasoning if needed. Take the skillet off the heat and spoon the filling into the greased pie plate. | Why: Adding the peas and cooked chicken last keeps them tender rather than overcooked.
- 06
Top and bake the pie
Unfold the thawed pastry over the filled, greased pie plate. Trim any large overhang, press the edges against the rim to seal, and cut three small steam vents in the center. Beat 1 egg in a small bowl and brush a thin coat over the pastry. Place the pie plate on a rimmed baking sheet and bake on the center rack of the preheated 400°F (205°C) oven for 28–30 minutes, until the pastry is puffed and deep golden and the filling bubbles through the vents. | Why: Vents release steam, the egg gives the crust its shine, and the baking sheet catches drips.
- 07
Rest and serve
Set the hot pie on a heatproof surface and let it rest for 10 minutes, until the bubbling subsides and the filling thickens slightly. Cut through the crust with a sharp knife, then spoon the pie into four bowls and serve warm. | Why: A short rest helps each serving hold together and makes the filling safer to eat.
