- 2 garlic cloves, peeled and finely minced

Make it
Instructions
- 01
Preheat, grease the dish, and start the pasta water
Set a rack in the middle of the oven and heat to 400°F (205°C). Coat the inside of a 9-inch square baking dish with 1 tsp olive oil. Fill a large pot with 3 qt water, stir in 1 tsp salt, cover, and bring to a rolling boil over high heat, about 8–12 minutes; prepare the vegetables while it heats. | Why: Greasing prevents sticking, and starting the water now keeps the rest of the cooking moving.
- 02
Wash and prepare the greens and aromatics
Rinse 5 oz baby spinach and 1/4 cup fresh basil leaves; dry both thoroughly. Peel and finely mince 2 garlic cloves. Set the spinach, basil, and garlic in separate piles; keep the basil aside for finishing. | Why: Dry greens won't dilute the sauce, and keeping the garlic separate lets it toast without burning.
- 03
Boil and drain the ravioli
When the water is boiling, add 20 oz refrigerated cheese ravioli. Stir gently once and cook for about 3–4 minutes, or 1 minute less than the package directs, until the ravioli float and are just tender. Drain in a colander; do not rinse. | Why: Slightly undercooked ravioli finish in the oven without turning mushy.
- 04
Wilt the spinach in tomato sauce
While the ravioli drains, pour 2 cups marinara sauce into a large skillet over medium heat. Add the prepared spinach and 1/4 tsp ground black pepper. Stir for 3–4 minutes, until the spinach is wilted and the sauce is gently bubbling; taste and adjust the seasoning if needed. | Why: Wilting the spinach first keeps the bake compact and evenly sauced.
- 05
Assemble and bake until bubbly
Spread a thin layer of the warm sauce in the greased baking dish. Add the drained ravioli, spoon the remaining sauce over it, and sprinkle evenly with 1 cup shredded mozzarella cheese. Bake uncovered on the middle rack at 400°F (205°C) for 15–18 minutes, until the sauce bubbles at the edges and the cheese is fully melted with a few golden spots. | Why: A saucy base prevents sticking, while uncovered baking gives the cheese a golden finish.
- 06
Toast the garlic crumbs
During the last 5 minutes of baking, heat 1 tbsp olive oil in a small skillet over medium heat. Add 1/3 cup panko breadcrumbs and stir for 2–3 minutes until light golden. Add the prepared garlic and stir for 30–60 seconds more, until fragrant and the crumbs are golden brown; immediately remove the skillet from the heat. | Why: Toasting separately keeps the topping crisp and prevents the garlic from scorching in the oven.
- 07
Rest, garnish, and serve
Remove the bubbling bake from the oven and let it rest for 5 minutes, until it settles enough to portion neatly. Scatter the toasted crumbs over the top, tear the prepared basil leaves over them, and serve warm in four portions. | Why: A brief rest protects the creamy layers, and a last-minute topping stays crunchy and fresh.
