Rinse and simmer the lentils
Set out a medium saucepan, colander, measuring cup, and wooden spoon. Rinse 1 cup dry green lentils in a fine-mesh colander, picking out any debris. Add the lentils, 3 cups water, and 1/2 tsp fine salt to the saucepan. Bring to a boil over high heat, then reduce to a steady simmer, partially cover, and cook for 20–25 minutes, until tender but still holding their shape.
