Instructions
- 01
Heat the oven and set up
Set a rack in the center of the oven and heat it to 200°F (95°C). Line a rimmed baking sheet with parchment, set a large nonstick or well-seasoned skillet by the stove, and gather a cutting board, knife, colander, spatula, and small bowl. The warm oven will hold finished quesadillas while you cook the rest. | Why: A low oven keeps the first batch crisp and warm without overcooking it.
- 02
Brown the mushroom and bean filling
Rinse and thoroughly dry 8 oz cremini mushrooms; trim the ends and slice them about ¼ inch thick. Peel and finely chop ½ cup yellow onion and mince 2 garlic cloves. Drain and rinse 1 can (15 oz) cannellini beans in a colander. Heat 1 tbsp olive oil in the skillet over medium-high heat until it shimmers. Add the mushrooms in an even layer and cook for 5–6 minutes, stirring only occasionally, until their released moisture evaporates and the edges are deeply browned. Add the onion and cook 3 minutes until softened. Stir in the garlic, 1 tsp smoked paprika, ½ tsp ground cumin, ½ tsp fine salt, and ¼ tsp black pepper; cook 30 seconds until fragrant. Add the beans and use the spatula to lightly crush about half of them. Cook 2 minutes, stirring, until the filling is hot and cohesive. Transfer it to a bowl and wipe the skillet clean. | Why: Browning concentrates the mushrooms’ savory flavor, while partly crushing the beans helps the filling stay put.
- 03
Fill and crisp the quesadillas
Grate 1½ cups Monterey Jack cheese if it is not already shredded. Lay 4 (8-inch) flour tortillas flat. Divide the cheese and mushroom-bean filling among the tortillas, spreading the filling over one half of each and leaving a small border; fold the bare half over the filling. Heat the clean skillet over medium heat. Cook the folded quesadillas in batches, without crowding, for 2–3 minutes per side, pressing gently with the spatula and turning once. Adjust the heat as needed: the tortillas should become crisp and spotty golden, and the cheese should melt. Transfer cooked quesadillas to the warm baking sheet in the oven while finishing the batches. | Why: Folding makes the filling easy to contain, and moderate heat gives the cheese time to melt before the tortillas darken.
- 04
Mix the lime-cilantro cream
While the quesadillas cook, finely chop 2 tbsp fresh cilantro leaves and juice 1 lime. In a small bowl, stir together ½ cup sour cream, ¼ cup mild salsa, the lime juice, and cilantro until smooth. Taste and add a pinch more salt only if needed; the filling is already seasoned. Set the bowl on the table. | Why: A cool, tangy dip balances the browned, smoky filling and keeps the meal bright.
- 05
Rest briefly, cut, and serve
Remove the quesadillas from the oven and let them rest on the baking sheet for 2 minutes so the melted cheese can settle. Cut each into 3 wedges with a sharp knife or pizza cutter, then serve hot with the lime-cilantro cream for dipping. | Why: A short rest helps the filling stay inside each crisp wedge when cut.
