Ingredients

  • 4 boneless, skinless chicken thighs, patted dry; excess fat trimmed
  • 0.75 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oils
  • 1 yellow onion, peeled and finely diced
  • 3 garlic cloves, peeled and minced
  • 1 tsp ground cumin
  • 0.5 tsp ground coriander
  • 1.5 cup long-grain white rices
  • 1 cup cooked chickpea, rinsed and drained
  • 1 lemon, zested; halved, with juice reserved
  • 2.5 cup low-sodium chicken broths
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 3 cup baby spinaches, rinsed and thoroughly dried
  • 1 tbsp unsalted butter
  • 2 tbsp fresh parsleies, chopped

Instructions

  1. 01

Heat the oven and set up

Set a rack in the middle of the oven and preheat to 400°F (200°C). Set out a 4-quart oven-safe pot with a lid, a cutting board, a sharp knife, measuring cups and spoons, and a clean plate for the browned chicken. | Why: Preparing the pot and oven first keeps the cooking sequence smooth.

  2. 02

    Season and brown the chicken

Pat 4 boneless, skinless chicken thighs completely dry with paper towels; trim away any loose excess fat. Season all over with ¾ tsp kosher salt and ½ tsp black pepper. Heat 2 tbsp olive oil in the oven-safe pot over medium-high heat until shimmering. Lay in the chicken in a single layer and brown for 3–4 minutes per side, until richly golden (it will finish cooking later). Transfer to the clean plate; leave the browned bits and oil in the pot. | Why: Drying and browning the chicken creates a flavorful crust and savory pan drippings.

  3. 03

Toast the aromatics, spices, and rice

While the chicken browns or just after transferring it, peel and finely dice 1 medium yellow onion and peel and mince 3 garlic cloves. Reduce the heat to medium. Add the onion and cook for 3–4 minutes, stirring, until softened and glossy. Stir in the garlic, 1 tsp ground cumin, and ½ tsp ground coriander for 30 seconds, until fragrant. Add 1½ cups long-grain white rice and stir for 1 minute to coat the grains in the seasoned pan fat. | Why: Softening the aromatics and toasting the rice builds depth before the liquid goes in.

  4. 04

Add the broth, chickpeas, and lemon

Rinse 1 cup cooked chickpeas in a sieve and drain well. Finely zest 1 lemon, then cut it in half and set the halves aside for finishing. Pour 2½ cups low-sodium chicken broth into the pot and scrape up the browned bits. Stir in the drained chickpeas, the lemon zest, ½ tsp kosher salt, and ¼ tsp black pepper. Bring to a gentle boil, about 2–3 minutes; taste a drop of broth and adjust seasoning if needed, keeping it pleasantly savory and not overly salty. | Why: The broth cooks the rice, while chickpeas and lemon zest season the whole pot from within.

  5. 05

Bake until the rice is tender and chicken is done

Return the browned chicken and any plate juices to the pot, placing the pieces on top of the rice without submerging them. Cover with the lid and carefully transfer the pot to the oven. Bake for 22 minutes, then check that the rice is tender and has absorbed most of the broth, and that the thickest part of each chicken thigh registers 165°F (74°C) on an instant-read thermometer. If the rice is still firm, cover and bake 3–5 minutes more, checking again. | Why: Covered oven cooking finishes the chicken gently while the rice absorbs the seasoned broth.

  6. 06

Wilt the spinach, finish, and serve

Set the pot on a heat-safe surface and, using clean tongs, transfer the cooked chicken to a clean plate. Rinse and thoroughly dry 3 packed cups baby spinach; fold it into the hot rice until just wilted, about 1 minute. Stir in 1 tbsp unsalted butter and 2 tbsp chopped fresh parsley. Squeeze the reserved lemon halves over the rice, avoiding any seeds, and fluff gently with a fork. Rest the covered pot for 5 minutes, then return the chicken on top and serve hot. | Why: Adding the greens and lemon at the end keeps the spinach bright and the finish fresh.
