Instructions
- 01
Prepare the dill-pickle sauce
Set out a small bowl, whisk, cutting board, and knife. Finely chop the pickle and dill, then whisk them with the mayonnaise, yogurt, Dijon, and lemon juice until creamy. Cover and refrigerate while you prepare the rest; keep the cutting board and knife for ready-to-eat ingredients separate from the raw fish tools. 0.5 cup mayonnaise 0.25 cup plain Greek yogurt 2 tbsp finely chopped dill pickle 1 tbsp chopped fresh dill 1 tbsp lemon juice 1 tsp Dijon mustard | Why: Chilling lets the sharp, herby flavors mingle and keeps the sauce cool for serving.
- 02
Toss the crisp apple slaw
Wash and dry the apple and celery. Core and cut the apple into thin matchsticks, then thinly slice the celery. In a medium bowl, toss them with the cabbage, vinegar, honey, and salt. Let stand at room temperature for 10 minutes, tossing once, until the cabbage softens slightly but remains crunchy. 1 green apple 1 celery stalk 3 cups finely shredded green cabbage 1 tbsp apple cider vinegar 1 tsp honey 0.25 tsp fine salt | Why: A brief rest seasons the vegetables while keeping their fresh crunch.

Bread the cod
Heat the oven to 220°C / 425°F. Set a wire rack over a rimmed baking sheet and lightly grease the rack. Arrange three shallow dishes: put the flour in the first, beat the eggs in the second, and combine the panko, paprika, garlic powder, salt, and pepper in the third. Stir the olive oil into the panko mixture until evenly moistened. Pat the fish very dry, cut into four bun-size portions, and season lightly with salt and pepper. Working one piece at a time, coat it in flour and shake off excess, dip in egg, then press into the panko on all sides. Set the coated pieces on the rack. Wash your hands and sanitize any surface that touched raw fish. 0.5 cup all-purpose flour 2 large eggs 1.5 cups panko breadcrumbs 2 tbsp olive oil 1 tsp paprika 0.5 tsp garlic powder 0.75 tsp fine salt 0.25 tsp black pepper 600 g cod fillets | Why: Dry fish and a light, oiled crumb coating help the crust turn crisp instead of soggy.
- 04
Bake until crisp and flaky
Bake on the prepared rack for 12–15 minutes, turning the sheet once halfway through, until the coating is deep golden and crisp. Check the thickest portion with an instant-read thermometer; the center should reach 63°C / 145°F, and the flesh should separate into moist flakes. If needed, bake for another 1–2 minutes and check again. | Why: The rack lets hot air crisp the coating on all sides, while a temperature check confirms doneness.
- 05
Warm the buns and serve
During the last 2 minutes of baking, place the buns cut-side up on a separate sheet and warm them in the oven until soft and lightly toasted at the edges. Wash and dry the lettuce, then separate it into leaves. Spread the chilled sauce over the bun halves, add lettuce and a piece of crisp cod, then top with a generous tangle of slaw. Serve at once, with any extra sauce and slaw alongside. 4 soft sandwich buns 4 lettuce leaves | Why: Warm buns and cool, crunchy toppings make a crisp, balanced sandwich.
