Ingredients

  • 300 g short-grain rice
  • 450 ml waters
  • 1 english cucumber, thinly sliced
  • 60 ml rice vinegars
  • 1 tbsp granulated sugar
  • 0.25 tsp fine salt
  • 80 ml mayonnaise
  • 30 ml ketchups
  • 15 ml worcestershire sauces
  • 5 ml soy sauces
  • 560 g extra-firm tofu, drained
  • 0.75 tsp fine salt
  • 0.25 tsp black pepper, freshly ground
  • 60 g all-purpose flour
  • 2 large eggs, beaten
  • 120 g panko breadcrumbs
  • 80 ml neutral frying oil

Instructions

  1. 01

    Cook the rice

Set a medium saucepan with a tight-fitting lid by the stove. Put 300 g short-grain rice in a fine-mesh sieve and rinse under cold running tap until the runoff is mostly clear; drain for 1 minute. Transfer to the saucepan with 450 ml water. Bring to a boil over medium-high heat, stir once, cover, and reduce to low. Simmer gently for 15 minutes, until the liquid is absorbed. Turn off the heat and leave covered for 10 minutes; then fluff with a fork and keep covered, off the heat, until serving. | Why: Rinsing limits gumminess, and the covered rest finishes steaming the grains.

  2. 02

Make the cucumber pickles and tangy sauce

Wash and dry 1 English cucumber, trim the ends, and slice it thinly. In a medium bowl, stir together 60 ml rice vinegar, 1 tbsp granulated sugar, and 0.25 tsp fine salt until dissolved; toss with the slices and set aside for at least 10 minutes, stirring once. In a separate small bowl, whisk 80 ml mayonnaise, 30 ml ketchup, 15 ml Worcestershire sauce, and 5 ml soy sauce until smooth. Refrigerate both bowls while preparing the cutlets. | Why: A short soak makes the slices bright and crisp, while the creamy sauce adds a savory finish.

  3. 03

    Press and bread the tofu

Drain 560 g extra-firm tofu and pat dry. Cut crosswise into 8 equal slabs; arrange between clean kitchen towels on a plate, place a second plate and a heavy can on top, and press for 15 minutes. Pat dry again and season both sides evenly with 0.75 tsp fine salt and 0.25 tsp black pepper. Set out three shallow bowls: put 60 g all-purpose flour in the first; beat 2 large eggs in the second; put 120 g panko breadcrumbs in the third. Coat each slab in the first bowl, then the second, then the third, pressing gently so the coating adheres. Set on a clean plate in a single layer. | Why: Removing moisture and coating in stages helps the crust cling and crisp evenly.

  4. 04

    Fry the cutlets until golden

Line a plate with paper towels and set a large, heavy skillet on the stove. Add 80 ml neutral frying oil and heat over medium heat to 175°C/350°F, or until a breadcrumb dropped in sizzles steadily without darkening at once. Fry 4 coated slabs at a time without crowding, 3–4 minutes per side, until deep golden, crisp, and hot throughout. Transfer to the lined plate; let the skillet return to temperature before frying the remaining 4 slabs for 3–4 minutes per side. Adjust heat as needed to keep the crust from scorching. Rest for 2 minutes. | Why: Moderate heat browns the coating before it burns, and two batches keep it crunchy.

  5. 05

    Assemble and serve

Uncover and fluff the warm grains again, then divide among 4 bowls. Drain the chilled slices lightly with a fork, keeping their bowl of liquid behind, and arrange them beside 2 cutlets per serving. Spoon the chilled sauce over each bowl and serve immediately while the crust is crisp. | Why: Draining the topping preserves the crunch, and serving promptly gives the best contrast of temperatures and textures.
