Ingredients

  • 2 cup seedless red grapes
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper, freshly ground
  • 1.5 lb chicken cutlets, boneless, skinless
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper, freshly ground
  • 0.25 cup all-purpose flour
  • 2 eggs
  • 0.75 cup panko breadcrumbs
  • 0.33 cup parmesan cheese, finely grated
  • 2 tbsp olive oils
  • 4 cup arugulas
  • 1 lemon
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt

Instructions

  1. 01

Preheat the oven and prepare the pan

Set an oven rack in the center and heat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper. Set out a large skillet, three shallow bowls, and a clean plate for the cooked cutlets. | Why: Lining the pan prevents sticking, and setting up the work area makes breading safer and quicker.

  2. 02

    Roast the grapes

Wash and thoroughly dry 2 cups seedless red grape. Spread them on the lined baking sheet and toss with 1 tbsp olive oil, 1 tbsp balsamic vinegar, 0.25 tsp kosher salt, and 0.25 tsp black pepper. Roast at 425°F (220°C) for 18–20 minutes, until some skins split and the juices look syrupy. Remove the sheet from the oven and let it stand while you finish the cutlets. | Why: High heat concentrates the fruit's sweetness while the vinegar adds a savory-tangy edge.

  3. 03

    Prepare and season the cutlets

While the fruit roasts, pat 1.5 lb chicken cutlet dry; if any piece is thicker than ½ inch, pound it between sheets of plastic wrap to an even ½ inch. Season both sides with 0.5 tsp kosher salt and 0.25 tsp black pepper. Put 0.25 cup all-purpose flour in the first bowl. Beat 2 eggs in the second bowl. In the third bowl, stir together 0.75 cup panko breadcrumbs and 0.333 cup Parmesan cheese. Coat each cutlet in the first bowl, dip in the second, then press into the third until evenly covered. Place uncooked cutlets on a separate plate; wash hands and sanitize any surfaces that touched raw poultry. | Why: Even thickness promotes safe, even cooking, and the three-stage coating turns crisp without sliding off.

  4. 04

    Pan-fry and rest the cutlets

Heat a large skillet over medium heat for 2 minutes. Add 2 tbsp olive oil, using half for the first batch and reserving half for the second. When the first addition shimmers, add half the breaded cutlets in a single layer. Cook for 3–4 minutes per side, until the crust is deep golden and the thickest part registers 165°F (74°C). Transfer to the clean plate. Add the reserved oil and cook the remaining cutlets the same way, adjusting the heat if the coating darkens too quickly. Rest the cooked cutlets for 3 minutes; do not reuse the plate that held raw poultry. | Why: Small batches keep the crust crisp, while the thermometer confirms the centers are safely cooked.

  5. 05

    Dress the greens and serve

Rinse and thoroughly dry 4 cups arugula. Wash 1 lemon, halve it, and squeeze 1 tbsp juice into a serving bowl, removing any seeds; save the remaining half for another use. Whisk the juice with 1 tbsp olive oil and 0.25 tsp kosher salt. Toss the greens in the dressing just before serving. Divide the cutlets and salad among four plates, then spoon the warm roasted fruit and any pan juices over the cutlets. Serve immediately while the coating is crisp. | Why: Dressing the greens at the last moment keeps them perky and balances the rich crust and sweet fruit.
