Ingredients

  • 2 chickpeas, drained, rinsed, and patted very dry
  • 1.5 cup corn kernels, thawed if frozen and patted dry
  • 1.5 tbsp olive oils
  • 2 tsp ranch seasoning
  • 0.5 tsp smoked paprika
  • 0.25 tsp fine salt
  • 1 avocado, halved, pitted, and scooped
  • 0.5 cup plain greek yogurt
  • 1 tbsp lime juice, freshly squeezed
  • 1 garlic clove, peeled
  • 2 cup green cabbages, finely shredded
  • 1 tbsp lime juice, freshly squeezed
  • 2 tbsp cilantro, chopped
  • 8 corn tortillas

Instructions

  1. 01

Heat the oven and prepare the chickpeas

Set a rack in the center of the oven and preheat to 425°F (220°C). Line a rimmed sheet pan with parchment. Drain and rinse the 2 cans chickpeas, then spread them on a clean kitchen towel and pat very dry; discard any loose skins that come away easily. Keep the prepared chickpeas nearby. | Why: Dry chickpeas roast up crispier instead of steaming.

  2. 02

    Season the sheet-pan filling

Put the prepared chickpeas on the lined pan with the 1 1/2 cups corn kernels. Drizzle with 1 1/2 tbsp olive oil and sprinkle over 2 tsp ranch seasoning, 1/2 tsp smoked paprika, and 1/4 tsp fine salt. Toss until evenly coated, then spread into a single layer with a little space between clusters. | Why: Even spacing helps the chickpeas crisp and the corn brown.

  3. 03

    Roast until golden and crisp

Roast the pan for 22–26 minutes, stirring once after about 14 minutes, until the corn has browned in spots and the chickpeas are deeply golden with crisp edges. Remove the pan from the oven and let the filling rest while you prepare the toppings; it will crisp a little more as it cools. | Why: A brief rest lets the chickpeas firm up and makes the filling easier to tuck into tacos.

  4. 04

    Blend the avocado crema

Halve, pit, and scoop the 1 avocado into a blender or small food processor. Add 1/2 cup plain Greek yogurt, 1 tbsp lime juice, and the peeled 1 small garlic clove. Blend until smooth, scraping down the sides as needed. Taste and check that the crema is tangy and creamy; transfer it to a small bowl. | Why: Blending makes a cool, smooth contrast to the warm, boldly seasoned filling.

  5. 05

    Make the crunchy cabbage topping

Put the 2 cups shredded green cabbage in a bowl. Add 1 tbsp lime juice and the 2 tbsp chopped cilantro; toss well and let stand for 5 minutes, tossing once more before serving. | Why: A short rest softens the cabbage just enough while keeping its fresh crunch.

  6. 06

    Warm the tortillas

Heat a dry skillet over medium heat. Warm the 8 corn tortillas in batches for about 20–30 seconds per side, until pliable and lightly toasted in spots. Stack them in a clean kitchen towel to keep warm. | Why: Warm tortillas bend around the filling without cracking.

  7. 07

    Fill and serve

Divide the roasted chickpea-corn filling among the warm tortillas. Top each with the cabbage mixture and spoon over the avocado crema. Serve right away while the filling is warm and crisp and the tortillas are soft. | Why: Assembling just before eating preserves the contrast of crisp, cool, and creamy textures.
