Ingredients

  • 2 yellow onions, peeled and thinly sliced
  • 3 garlic cloves, minced
  • 2 tbsp unsalted butters
  • 2 tbsp olive oils
  • 1 tsp fresh thyme leaves
  • 1.5 lb boneless, skinless chicken thighs
  • 1 tsp kosher salt
  • 0.5 tsp black pepper, ground
  • 1.5 cup long-grain white rices
  • 2.5 cup low-sodium chicken broths
  • 1 tbsp worcestershire sauce
  • 1 cup gruyère cheese, shredded
  • 2 tbsp fresh parsleies, chopped

Instructions

  1. 01

Set up and slowly brown the onions

Heat the oven to 375°F (190°C). Set out a large oven-safe skillet with a tight-fitting lid (or foil), a cutting board, and a knife. Peel and thinly slice 2 medium yellow onions; mince 3 garlic cloves. Melt 2 tbsp unsalted butter with 2 tbsp olive oil in the skillet over medium heat. Add the sliced vegetables and cook, stirring often, for 20–25 minutes, lowering the heat if they begin to scorch, until very soft and a deep golden brown. Stir in 1 tsp fresh thyme leaves and the minced aromatics for the final minute, until fragrant. | Why: Patient browning builds the sweet, savory base that gives the whole bake its rich flavor.

  2. 02

    Season and brown the chicken

While the onions cook, pat 1.5 lb boneless, skinless chicken thighs dry with paper towels. Season both sides with 1 tsp kosher salt and 1/2 tsp black pepper, reserving half the salt for the rice. Transfer the browned onions to a plate, keeping the skillet on the stove. Arrange the thighs in the hot skillet in a single layer and sear for 3–4 minutes per side, until well browned but not cooked through; work in batches if needed. Move the pieces to a clean plate. | Why: Dry surfaces and a hot pan create flavorful browning, while finishing the cooking in the oven keeps the meat tender.

  3. 03

Bake the rice and chicken together

Rinse 1 1/2 cups long-grain white rice in a fine-mesh strainer under cool water until the runoff is mostly clear, then drain well. Pour 2 1/2 cups low-sodium chicken broth and 1 tbsp Worcestershire sauce into the skillet, scraping up the browned bits. Stir in the drained grains and the reserved salt, then fold the browned onion mixture back in. Nestle the thighs on top, pour in any juices from the plate, and bring the liquid just to a simmer on the stove. Cover the skillet tightly with its lid or foil and bake for 30–35 minutes, until the rice is tender and has absorbed the liquid and the thickest thigh reaches 165°F (74°C) on an instant-read thermometer. If the rice is still firm, cover and bake 5 minutes more, then check again. | Why: A tight cover traps steam so the grains cook evenly while the chicken finishes safely on top.

  4. 04

Melt the cheese, rest, and serve

Remove the cover carefully, tilting it away from you to avoid the steam. Scatter 1 cup shredded Gruyère cheese over the top. Broil on high for 1–3 minutes, watching closely, until the surface is melted and browned in spots. Let the skillet rest for 5 minutes so the rice settles. Rinse, dry, and chop 2 tbsp fresh parsley, scatter it over the bake, and serve hot from the skillet. | Why: A short broil adds a savory golden finish, and resting helps the portions hold together when served.
