Ingredients

  • 1.25 lb cremini mushrooms
  • 3 garlic cloves
  • 1 tbsp fresh thyme, chopped
  • 2 oz arugulas
  • 1 lemon
  • 2 tbsp unsalted butters
  • 4 cup low-sodium vegetable broth
  • 1 cup quick-cooking polenta, dry
  • 0.75 cup grated parmesan cheese
  • 0.5 tsp kosher salt
  • 0.25 tsp ground black pepper
  • 2 tbsp olive oils
  • 0.5 tsp kosher salt
  • 0.25 tsp ground black pepper
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 4 eggs

Instructions

  1. 01

Prepare the mushrooms, aromatics and greens

Set out a 3-quart saucepan, a large nonstick skillet, a whisk, two bowls and a plate. Wipe 1.25 lb cremini mushroom clean with a damp towel, trim the tough stem ends and slice 1/4 inch thick. Peel and mince 3 garlic clove. Strip and chop 1 tbsp fresh thyme. Wash 2 oz arugula and dry thoroughly; place in one bowl. Wash and dry 1 lemon, finely zest it into the greens bowl, then squeeze its juice into the second bowl, removing any seeds. Keep the chopped aromatics separate from the slices. | Why: Dry surfaces help the slices brown, and keeping the aromatics separate prevents them from burning.

  2. 02

    Cook and season the polenta

Rub 2 tbsp unsalted butter over the bottom and sides of the 3-quart saucepan to grease it; leave any remaining butter in the pan. Pour in 4 cups low-sodium vegetable broth and bring to a boil over medium-high heat, about 4 minutes. Slowly whisk in 1 cup quick-cooking polenta. Reduce to low and cook, whisking frequently, for 5–7 minutes, until thick and creamy without gritty bits. Turn off the heat and stir in 0.75 cup grated Parmesan cheese, 0.5 tsp kosher salt and 0.25 tsp ground black pepper. Cover the pan and keep it off the heat; if it thickens before serving, whisk in a splash of hot water. | Why: Greasing first and whisking as you pour keep the texture smooth; the final seasoning makes a flavorful base.

  3. 03

    Brown and glaze the mushrooms

Heat the large nonstick skillet over medium-high heat for 1 minute, then add 2 tbsp olive oil. Add the prepared slices and spread them in an even layer. Cook for 7–9 minutes, stirring only occasionally, until their moisture evaporates and the edges turn deep golden brown. Add the prepared minced aromatics and 0.5 tsp kosher salt and 0.25 tsp ground black pepper; stir for 1 minute, until fragrant. Pour in 1 tbsp balsamic vinegar, stir for 1 minute until glossy, then transfer the mixture to the plate. Keep the skillet for the next step. | Why: Browning before seasoning lets moisture escape, while the brief glaze adds tang without making the topping soggy.

  4. 04

    Fry the eggs

Wipe the emptied skillet carefully with a paper towel. Set it over medium heat and add 1 tbsp olive oil. Crack in 4 eggs, spacing them apart; cook for 4–5 minutes, until the whites and yolks are fully set and the undersides have crisp golden edges. Reduce the heat if the edges brown before the tops set. Take the skillet off the heat. | Why: A clean, lightly oiled skillet gives the eggs crisp edges without scorching the glaze left behind.

  5. 05

    Dress and serve

Pour the reserved juice over the dried greens and zest; toss just before serving. Whisk the warm base once, divide it among four bowls and spoon the glazed topping over it. Place one cooked egg in each bowl and add a handful of dressed greens alongside. Serve immediately while the base is creamy and the egg edges are crisp. | Why: Dressing at the end keeps the greens lively and gives each rich bite a fresh contrast.
