Ingredients

  • 30 g arugulas
  • 2 tbsp flat-leaf parsley, chopped
  • 2 garlics, minced
  • 450 g ground beefs
  • 0.33 cup plain breadcrumbs
  • 0.25 cup parmesan cheese, grated
  • 1 egg
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 2 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 4 pita breads
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 0.25 tsp salt

Instructions

  1. 01

Prepare the oven, pan, and greens

Set an oven rack in the center and preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper. Rinse 30 g arugula and 2 tbsp flat-leaf parsley separately; dry both thoroughly. Chop the parsley. Peel and mince 2 cloves garlic. Set the prepared ingredients aside separately. | Why: Lining the pan prevents sticking, and dry greens stay crisp rather than watery.

  2. 02

    Mix and shape the meatballs

In a large bowl, combine 450 g ground beef, 0.33 cup plain breadcrumbs, 0.25 cup grated Parmesan cheese, 1 egg, 0.5 tsp salt, and 0.25 tsp ground black pepper with the prepared parsley and garlic. Mix gently just until combined. With clean hands, shape into 16 equal meatballs and arrange them in a single layer on the lined baking sheet. Wash your hands and any surfaces that touched the raw mixture. | Why: Gentle mixing keeps the meatballs tender, while evenly sized portions cook at the same rate.

  3. 03

    Bake until cooked through

Slide the baking sheet onto the center rack and bake for 15–18 minutes, until the meatballs are browned and an instant-read thermometer inserted into the center of one reads at least 160°F (71°C). Remove the sheet from the oven and let the meatballs rest for 2 minutes. Leave the oven on for warming the pitas. | Why: Checking the center confirms the beef is safely cooked without relying on color alone.

  4. 04

    Sauce and melt the cheese

Pour 2 cups marinara sauce into a large skillet and bring to a gentle simmer over medium heat, about 3 minutes. Add the cooked meatballs and turn gently to coat. Scatter 1 cup shredded mozzarella cheese over them, cover the skillet, and cook for 2–3 minutes more, until the sauce bubbles and the cheese has fully melted. Turn off the heat. | Why: A short covered simmer warms the sauce and melts the cheese without drying out the meatballs.

  5. 05

Warm the pitas and dress the arugula

Place 4 pita breads on a clean baking sheet and warm in the still-hot 425°F (220°C) oven for 2 minutes, until pliable. Meanwhile, toss the prepared arugula with 1 tbsp lemon juice, 1 tbsp olive oil, and 0.25 tsp salt in a clean bowl. Remove the pitas from the oven. | Why: Warm bread folds without cracking, while dressing the greens at the last minute keeps them lively.

  6. 06

    Fill and serve

Split each warm pita to form a pocket, or fold it if it will not open cleanly. Spoon four saucy meatballs and some melted cheese into each; divide the dressed arugula among the pitas. Serve immediately with any extra sauce from the skillet spooned alongside. | Why: Filling just before serving keeps the bread warm and the greens crisp.
