Ingredients

  • 1.2 kg chicken thighs, patted dry
  • 1 tbsp olive oil
  • 1 tsp fine salt
  • 0.5 tsp black pepper, ground
  • 1 tsp smoked paprika
  • 1.5 cup jasmine rice
  • 3 scallions, thinly sliced; pale and green parts separated
  • 1 tbsp unsalted butter
  • 360 ml chicken broths
  • 0.5 tsp fine salt
  • 450 g green beans, stem ends trimmed
  • 1 tbsp olive oil
  • 0.25 tsp fine salt
  • 2 garlic cloves, finely grated
  • 2 tbsp honeies
  • 1 lime, juiced
  • 0.25 tsp red pepper flake

Instructions

  1. 01

Heat the oven and season the chicken

Set a rack in the center of the oven and heat it to 220°C / 425°F. Line a rimmed sheet pan with foil for easier cleanup. Pat the skin of 1.2 kg bone-in, skin-on chicken thighs thoroughly dry with paper towels; arrange them skin-side up on the pan. Rub the skin and exposed sides with 1 tbsp olive oil, then season evenly with 1 tsp fine salt, ½ tsp black pepper, and 1 tsp smoked paprika. Once the oven is fully hot, roast for 20 minutes; the skin should begin to turn golden. | Why: Dry skin and a hot oven encourage crisp browning.

  2. 02

    Cook the scallion rice

While the first roast is underway, rinse 1½ cups jasmine rice in a fine-mesh sieve under cool water until the runoff is mostly clear; drain well. Rinse and dry 3 scallions, then slice them thinly, keeping the pale and green parts separate. Melt 1 tbsp unsalted butter in a small lidded saucepan over medium heat. Add the pale slices and cook for 1 minute, stirring, until fragrant. Stir in the drained grain and toast for 1 minute. Pour in 360 ml chicken broth and add ½ tsp fine salt. Bring to a boil, cover, reduce the heat to low, and simmer for 15 minutes without lifting the lid. Turn off the heat and leave covered for 10 minutes; fluff gently with a fork and keep covered until serving. | Why: Rinsing removes surface starch for fluffy grains, while the covered rest finishes them evenly.

  3. 03

Add the beans and mix the glaze

As the first 20 minutes of roasting end, rinse 450 g green beans, trim their stem ends, and dry them well. Toss them on a plate with 1 tbsp olive oil and ¼ tsp fine salt. In a small bowl, finely grate 2 garlic cloves; stir in 2 tbsp honey, the juice of 1 lime, and ¼ tsp red pepper flakes until smooth. Carefully remove the hot pan. Turn the thighs skin-side up again if needed, then arrange the beans in the open spaces around them in a single layer. Roast for 12 minutes; the beans should start to blister and the chicken skin should be deeply golden. | Why: Dry, well-spaced beans blister instead of steaming, and mixing the glaze now keeps the final finish quick.

  4. 04

    Glaze and finish roasting

Brush the tops and sides of the thighs with the prepared honey-lime mixture, avoiding a thick puddle on the pan. Return it to the oven for 8–12 minutes, until the glaze looks shiny and lightly caramelized, the beans are tender with browned spots, and a thermometer inserted into the thickest part of a thigh without touching bone reads at least 74°C / 165°F. If the chicken is ready before the beans, move it to a clean plate and give the beans a few more minutes. | Why: Applying the sweet glaze near the end lets it caramelize without scorching.

  5. 05

Rest, finish the rice, and serve

Transfer the chicken to a clean platter and rest it for 5 minutes. Scatter the reserved green slices over the fluffed rice, then serve it alongside the chicken and charred beans, spooning any pan juices over the meat. Serve hot. | Why: A brief rest keeps the meat juicy, and the fresh scallion tops add a crisp, mild finish.
