Instructions
- 01
Prepare the vegetables, lemon, and chicken
Set out a large pot, a colander, a wide skillet, a clean plate, and separate boards or wash the board between produce and raw poultry. Wash and dry 250 g broccoli florets; cut any large pieces into bite-size florets. Peel and finely mince 3 garlic cloves. Wash and dry 1 lemon, then halve and squeeze it into a small bowl, removing the seeds. On a separate board, cut 450 g boneless skinless chicken breast into 2 cm pieces and pat dry with paper towels; put it in a bowl and coat with 0.5 tsp salt and 0.25 tsp ground black pepper. Wash hands and sanitize surfaces that touched raw chicken. | Why: Evenly sized, dry chicken browns well, and prepping produce before poultry avoids cross-contamination.
- 02
Start the pasta water
Pour 3 l water into the pot, cover, and bring to a rolling boil over high heat, about 6–8 minutes. Stir in 1 tsp salt and 300 g dry penne. Cook uncovered, stirring once or twice, according to the package time, usually 10–12 minutes; set a timer for 3 minutes less than the package time so you can add the broccoli later. | Why: A rolling boil cooks the pasta evenly, while timing its last minutes leaves room to cook the broccoli in the same pot.
- 03
Brown and cook the chicken
While the pasta cooks, heat the wide skillet over medium-high heat for 2 minutes. Add 1 tbsp olive oil and then the seasoned chicken in one layer. Cook 3–4 minutes without stirring to develop golden edges, then turn and cook 3–4 minutes more until no pink remains and the thickest piece reaches 74°C / 165°F. Transfer to the clean plate; do not wipe out the skillet. | Why: Leaving the chicken undisturbed briefly builds flavor without drying it out.
- 04
Cook the broccoli and drain
When the pasta timer sounds, add the prepared broccoli to the boiling pot. Boil 3 minutes more, until the broccoli is bright green and tender-crisp and the pasta is just firm in the center. Scoop out about 250 ml of the starchy cooking liquid into a heatproof cup, then drain the pasta and broccoli together in the colander; do not rinse. | Why: The broccoli cooks without another pan, and reserved cooking liquid helps the sauce cling to the pasta.
- 05
Toast the garlic crumbs
Reduce the skillet to medium heat and add 1 tbsp olive oil and 45 g plain dry breadcrumbs. Stir for about 2 minutes until golden, then add the prepared garlic and stir 30–60 seconds more, until fragrant but not brown. Immediately transfer the crumbs to a small bowl so they stay crisp and the garlic does not scorch. | Why: Brief toasting makes a fragrant, crunchy finish that contrasts with the creamy pasta.
- 06
Make the sauce and coat the pasta
Turn the skillet to medium-low. Pour in 150 ml heavy cream and stir up any browned bits, then stir in 100 g basil pesto and 125 ml of the reserved cooking liquid. Simmer gently for 2 minutes, stirring, until glossy; do not let it boil hard. Add the drained pasta and broccoli and the cooked chicken with its juices. Toss over medium-low heat for 1–2 minutes until hot throughout and lightly coated, adding a splash more reserved cooking liquid if the sauce looks thick. | Why: Gentle heat keeps the pesto bright and lets the starchy liquid turn the cream into a silky coating.
- 07
Finish with lemon, Parmesan, and crunch
Turn off the heat. Stir the prepared lemon juice into the pasta, then fold in 50 g Parmesan cheese until just melted. Taste and adjust with a little of the reserved pasta-cooking liquid if needed; the pesto and cheese add their own saltiness. Divide among four bowls, scatter the garlic crumbs over each portion, and serve immediately while the crumbs are crisp and the sauce is creamy. | Why: Adding lemon and cheese off heat keeps their flavors vivid, while last-minute crumbs retain their crunch.
